Have you tried it with freezing the tofu beforehand and noticed a difference? I've found freezing tofu helps really pull the moisture out and gives a different texture compared to just pressing it fresh, but I typically use the defrosted tofu for frying since it gives more of a chewy bounce I'm looking for in like a nugget situation. I'm curious how that would come out if used for jerky or if its too thin to make much of a difference.
