Hi. I chilled the flour only once that is before putting it in the moulds. Im not sure either why ur tarts are shrinking. Mayb you can try the recipe again following the exact measurements and method.
Just store it in an air tight container after cooling it. If it is wet or soft just heat it up again in pre heated oven for 3 mins. It should be fine. If you can keep it dry it will last longer

After the cheese filling ten minutes is enough even for 6cm. I bake the tart shells first for 20 mins. Take it out. Let it cool. Then put the filling. Then bake again 10 mins
You mean in breaks in while baking? Try to check again the following. Did you prick it like i did? Baking time? Is the dough too cold and you baked it? Is the measurments accurate and same type that i used ? Try again Pavitera. ❤
