Been fermenting my giardiniera but might use this method when I need a quick batch. The same ingredients but I add some fresh bay leaves add whole peppercorns etc, to the ferment. Love the slight heat that follows on from the jalapenos on a bite. Me and the family have a favorite sandwich using the giardineria, Salami, ham, the giardiniera, provolone, swiss, and some mayo. Toast the bread, cheeses, and meat a little add giardiniera and mayo. Tasty.

I grew up by Chicago. I do my Italian beef in the crock pot. I add dry Italian dressing session in beef broth with peppercorns. Turns out phenomenal.
