INGREDIENTS:
SOUP INGREDIENTS
2 pounds ground beef (80/20)
1 cup beef tallow
4 yellow onions, sliced
1 (14 ounce) can tomato puree
8 cups beef stock
1 bay leaf
¼ cup Worcestershire sauce
½ cup soy sauce
TKTK ketchup
1 teaspoon white vinegar
CROSTINI INGREDIENTS
1 stick room temperature butter
¼ cup yellow mustard
4 brioche hamburger buns
2 garlic cloves
1 tablespoon garlic powder
8 ounces emmentaler cheese, grated
GARNISH
Dill pickle, diced
Yellow onion, diced
COOKING METHOD:
SOUP METHOD:
1. In a large Dutch oven over medium heat, add beef tallow. Once melted, add onions and a pinch of salt. Stir to combine and let the onions gently steam and turn translucent, about 20 minutes.
2. Increase the heat to high and add knobs of ground beef. Using a wooden spoon, break the beef up into small pieces and cook until the beef and onions are deeply golden brown.
3. Once the beef is browned, add beef stock, bay leaf, Worcestershire, soy sauce and ketchup. Stir to combine and bring to a simmer.
4. Simmer for 1 hour, or until reduced and desired consistency is achieved.
CROSTINI METHOD
1. In a small bowl, stir together butter and mustard. Slather 4 hamburger buns with mustard butter and top with cheese.
ASSEMBLY:
1. Preheat oven to 500°F.
2. Set soup tureens on a sheet tray and ladle cheeseburger soup into tureens evenly.
3. Top with hamburger bun crostini and bake until the cheese is brown and bubbly - about 3 minutes.
4. Remove from the oven and top with pickles and onions. - ตลก

I love this episode! I worked at a ski resort making 720 pounds of chili a week, and 500 pounds of soup, and kept cheeseburger soup on the menu! but, it wasn't as done up as this! kudos! People, go make this!

My mom passed when I was only 17 and my drunk dad who hurt us both for years kicked me out. I still have one of her wooden spoons from the kitchen (we dont cook with it a friend made me a cool shadow box for her with pics and stuff), but I'm 33 soon. IDK how I chose that item to take being homeless at such a young age or how I kept it but dang I would cry about my wooden spoon. lol.

I made Cheeseburger soup last week. So good. Next time I make it I will use less salt as it was too salty for us. It reheated well and we loved it. Can’t wait to try your recipe, Matty.
As a girl who served at many a fine dining establishment in Cincinnati between 2000 and 2010. Matty makes me miss partying with the cooks. Those days/shifts/music festivals/dudes were fire.

My favorite part of each episode is when Matty is blown away at how good his own food tastes. Also I found some missing/incorrect things in the instructions vs what he calls out in the video in case anyone goes to make this with the instructions:
1 tablespoon tomato paste
3 (not 2) cloves of garlic
8 cups = 2 x 32oz boxes of beef stock (not 1)
2 bay leaves
0 white vinegar used
OMG this looks soooo good. It’s just a variation of a lot of common meals with Matty’s lil twist…..but I bet my life it’s delicious!

My family makes something very similar as cheeseburger soup, use heavy cream though and put shredded cheddar in the actual soup.

Welllllll, I for one, have lost count on how many times I've wanted a recipe for cheese burger soup or the like. Thisssss, looks awesome. Having said that, though, could someone please tell me where the dickens I'm supposed to get beef friggin tallow, or an adequate replacement~ come oooooon! Geepers!!! Not everyone cooks enough beef to save its rendored fat. I've been so concerned about saving chicken fat (since Schmaltz isn't sold where we live), that even after decades of cooking, I never thought to save beef fat. I think it would be awesome if Matty would make, only ONE, senior friendly video...I bet it would be a scream!!! Love this kid; he's an inspiration for sooooo many reasons.
