Top tip boys and girls: got the hankering for braised short rib NOW but didn't plan at least 24 hours ahead? Use a pressure cooker. I regularly use a pressure cooker for bone in short ribs, chuck roasts, etc, and while not quite as nice as doing it properly, you can have your pulled beef or slow cook short ribs in about 45 minutes flat. Which has made bone in short ribs a weeknight staple in my house vs a weekend treat. And yes you still get to sear in the cast iron. Yes boys and girls USE SCIENCE.
I've only ever owned one cook book before. Besides my grandma's 50 year old Betty Crocker cookbook, homestyle cookery is the only other book I'll need. Love you Matty. Don't ever fuckin change, bud.

Matty, thanks for the Houston shout-out lmao..... Austin is known for BBQ and food, but I'd argue Houston has good BBQ too and some of the best Ethnic food you can find in Texas or the south. We have a vibrant Asian population from India to Japan and China, we even have several traditional African restaurants and Central-South American. I think we are often overlooked in the culinary world because our city isn't super touristy ...
I like Pyrex bowls for making a double boiler because they have the lip, but I do like the bowl you are using for hand mixers. They are nice and tall, and prevent splashing all over
