Moussaka for Suzie

  • Moussaka
    Ingredients
    - 2 red onions, diced
    - 3 cloves garlic, diced
    - 750g lamb mince
    - 3 tbsp olive oil
    - Salt and pepper to taste
    - 1 cinnamon stick
    - 2 bay leaves
    - 2 tbsp tomato paste
    - 200ml red wine
    - 1 can of diced tomatoes
    - 120g butter
    - 120g flour
    - 1L milk
    - 150g grated Kefalotyri cheese (or parmesan if you can't find it)
    - 1/4 nutmeg ground
    - 3 large eggplant, sliced 1.5cm thick
    Method
    1. Start by heating the oil in a large pot, then add the onions and a pinch of salt. Cook for 5 minutes before adding the garlic, bay leaf and cinnamon stick.
    2. Add to ground lamb mince and stir to break it up.
    3. Cook the lamb mince for 6-7 minutes stirring occasionally and season with salt and pepper.
    4. Add the red wine and tomato purée to the pot, stir well and once the wine has reduced, add the tinned tomatoes.
    5. Stir the tomato well, put the lid on and cook for 25-30 minutes on low, stirring occasionally.
    6. For the white sauce, melt the butter in a medium pot over medium heat.
    7. Once the butter has melted, whisk in the flour and cook for 2-3 minutes.
    8. Pour in the milk and whisk until smooth. Once it starts to simmer, add the nutmeg and half of the grated cheese.
    9. Stir this one last time until smooth.
    10. Season the eggplant on both sides and cook on both sides in a large fry pan with lots of olive oil.
    11. To assemble the Moussaka, start by laying all the eggplant on the bottom, followed by the red meat sauce and finally the white cheese sauce.
    12. Sprinkle the rest of the cheese over the top and bake at 180°c for 25-30 minutes or until golden brown.
    13. PS. It's better the next day!

    We always have potatoes with aubergine and sometimes zucchini too. We also cut the veggies a lot thinner so you can make layers of all three at the bottom. Greetings from Greece

      Must be a regional thing. Mum never put potatoes in our moussaka. Agree on slicing thinner to allow for layering.

      Yes I was questioning the zucchini and why the eggplant was cut that thick :/
      My grandmother who’s greek would always make this every second Saturday and still does, it is one of the best Greek dishes and such an icon to our culture :)

      My mother never added potatoes in moussaka and zucchini are a big no no. Potatoes are said to make the moussaka lighter? but I believe that the overall taste changes a lot. Greetings from Thessaloniki Greece

      I prefer moussaka with just eggplant/no potato. And I love that he cut the eggplant thicker. That’s what I do, so you can really taste it; otherwise it’s too indistinguishable. But where is the recipe?

    As a Greek I have to say that mousaka traditionally comes with potatoes and eggplants (not just eggplants). Otherwise seemed like a perfect mousaka.

      @@Cinderella-mc8kf draws out the excess moisture, removes some of the residual bitterness that you can get, just generally makes them taste way better and have better texture

      Alexandrian? That’s precisely the way we make it in Alexandria with the exception of layering the meat and the aubergine (2 layers each) before the béchamel 😋

    Looks delicious! I love the thick eggplant too it keeps its identity after cooking.i want to add that the traditional moussaka is with potatos and they go always to the bottom so it drains some fluids and get more tasty!!btw if you look for more greek food i would suggest you prasospanakopita (leak-spinach-feta pie) which is the king of greek pies in my opinion!

      I'm Dutch but absolutely love Greek food, probably my favorite kitchen! I made that pie for Christmas two years ago and it was a big hit :D the recipe I found had lemon zest in it, which added a freshness to the richness that was amazing! Omg, now I'm inspired to make Moussaka this year!

    From a greek chef. You forgot potatoes the same way you cooked the eggplants( eggplants anf potatoes should be a little bit thiner but its ok the wat you did it). Exept that, perfect execution! Μπραβο!

      @@cgavin1 As a dish it's not that old, its first recipe can be tracked to approximately 1910, so tomatoes were available. Also, it surely was influenced by other dishes (minus the bechamel sauce) from middle east that date as far back as the 13th century.

    My dad was the head chef of a Greek restaurant and learned from the Greeks how to make many of their staple dishes, including this. He sliced his eggplant, zucchini, and potato very thinly and layers it like a lasagna. I appreciate your cool vids!

      @@MaFeLikEmE it is both, due to cross-cultural exchange during the years. There are small differences in each culture’s interpretation, but there is no reason to draw distinction there. To do that would be to disregard the overlap between the cultures and the many people living within them

      I know that’s right and with custard from scratch. And fresh vanilla cookies. A coconut creme pie would also rock righteously as would a creme brûlée or lemon icebox pie with shortbread crust. Now I’m all hungry 😂

      Yes to a pastitsio request, coming from a Greek!!! It’s also known as Greek Lasagna! It’s so delicious and has relatively cheap ingredients which should be appreciated by all! Kids love it, too! 🇬🇷🙏🏻

    Childhood favorite: Kedgeree. We also made it with Tuna, Rice and Peas. On each side of the plate some rice. The Tuna / Egg sauce in the middle. Peas around it and then top it with some grated yoke.

    beautiful but I would've loved to see a layer of fried potatoes too 👌 also a cheat way to get good seasoning is just to hit the meat with a load of Ras El Hanout, all the essential spices without needing to measure
