It's winter here in Aotearoa/ New Zealand so l haven't fancied the leftovers cold but, will modify this a bit to work with cooked shredded chicken and it will be perfect. When the weather is cold I usually turn the leftovers into a chicken and mushroom pie or a tomato and capsicum stew but, haven't had chicken and corn chowder for ages so will make this instead. 😊

@@AZ-Sharon I do like the cream corn. It's a great way to make it vegan, too! You can replace the eggs and oil in jiffy corn muffin mix with a can of creamed corn, too. Works great. :)
My method -in your biggest soup pot, fry chopped (streaky) bacon until almost crispy, remove from pot, add chopped onion, soften, add rest of veg, bit of flour, water and stock, boil, then simmer for at least 15 minutes, add cream, return the bacon, give it a few to heat the cream and serve. I also add a lot more frozen corn and omit chicken. I am very impressed with the US recipes this week. Usually, vids in other countries make them look super complicated or just gross. This looks fantastic. I hope if you do biscuits and gravy, remember that it's supposed to be a fast breakfast. Biscuits go in, start the gravy. The gravy should be done at the same time as the biscuits. And sage forward sausage, please! Very impressed, as always!
My family’s recipe is very similar; we add carrots & celery too. Using fresh sweet corn is the best (which we freeze in the summer). We also add shredded extra sharp cheddar cheese. Our recipe is called “Autumn Chowder”. It’s a family favorite!! And. . . we use the same recipe for clam chowder.

I’ve been debating whether to get one. I’ve always been scared of pressure cookers as my mother in law had one explode in her kitchen years ago & she had multiple burns from it. But since I’ve been watching this channel, I think I can handle it. 😊

Ya know... chicken corn chowder is also very good if you throw in a bit of shredded cheddar to melt at the end while sauteing the cream to make it cheesey chicken corn chowder. Don't let that put you off. I bought mine at 65. Bought a cheap generic brand from a big box store and absolutely love it! I use it a couple of times a week at least -stews, soups, stock, corned beef and anything l used to use a slow cooker or a pressure cooker for - they all go in the instant pot. No need to stir because of the way they heat and, as it's got a timer, l can just set and forget if l want to. They can be used to sauté or slow cook or pressure cook and you can use the preset programmes or manual settings. 😊
I’m 71 and I use my two instant pots weekly for meal prep purposes. I’ll have Chicken (I then shred it for salads and wrap sandwiches) and then soup or beans in the other. I grew up with my mother always using pressure cooker, so making the switch over to the instant pot made perfect sense. And they are so much more reasonable now they used to be so I would suggest getting one and using it. Also, there is a 3 quart version that might work well for you.
On my word! Will be trying this. I’ve always made mine in the slow cooker and never thought about using the Instant Pot for it. Definitely will be trying this
It's so easy. Just made this while watching your video. Just waiting for it to finish in the InstaPot for final taste. The smell is amazing. Only thing I changed I used chicken bone broth for richer more nutrional meal.

I am not sure what the culinary standard is but for me a chowder isn't a chowder without a hint of Bay leaf. Far be it from me to criticize a professional but you might want to give it a whirl. BTW, it looks yummy!
Perhaps not for you but millions are in use worldwide. That said, Rik's recipes can easily be made in a stovetop pressure cooker, slow cooker or on the stove. The method is less important than his recipe.
I cannot understand the point of them. I can make this soup in one pot on my stove in less than 30 minutes. Takes less time and I have more control because I can taste as I go and add more ingredients if necessary. I have never seen an insta pot video that convinced me to buy one.
Next time you find celery buy twice as much as you immediately need and dry (dehydrate) half of it until it's very dry, then store it in an air-tight container in your pantry. Use it dry in soups, or re-hydrate it for roasts, etc.

Yep, fry them a bit first. I've seen this with button mushrooms and the little portabellos.
