3 Ways to Preserve Nasturtiums

  • Nasturtiums are one of our favourite flowers to cook with, they are beautiful, peppery and versatile. We find it tough to keep up with all the goodness they have to offer during harvest months, so here are 3 recipes to elongate the lifespan of nasturtiums
    Method
    Nasturtium capers: divide a jar with 1 part water, 1 part vinegar, add a tsp salt and sugar (optional) and leave in the fridge for a few weeks.
    Nasturtium Flower Hot Paste: Bash the nasturtium flowers, with calendula petals in salt until it forms a paste, then add a splash of vinegar, place in a sterilised jar and pop in the fridge for a couple weeks
    Nasturtium Leaf Pesto: Blend the leaves with sunflower seeds, salt and olive oil until it forms a smooth paste, ready to eat straight away!
