It's not about being the most authentic. It's about making money! (People need to learn from so-called "Chinese" restaurants. They are everywhere and most are hugely successful. The cuisine is hardly Chinese at all though. If it were, people would be really weirded out. Some people were smart enough to take some aspects and dishes of their culture and make them palatable to a Western clientele. This is what having a business sense means.)

there are plenty of restaurants that make lots of money selling food that is authentic to the ethnicity they represent (including chinese food). it may be harder in non-urban areas but food is tied so closely to culture and many people running ethnic restaurants have already been forced to assimilate on so many levels. can’t fault a restaurant owner for wanting to make food the way their mother, and grandmother, and great-grandmother made it

Trashy super chinese buffets get away with it by cutting corners and serving product en masse, they're making a profit by being at the bottom of the margin. I'll admit, the "pork intestine dumpling" from ym local Sichuan restaurant does not sound appetizing at first, but it is the best I've tasted. Yes, a lot of Arab homes will make them in bulk and then freeze them in batches, but from what i’ve personally experienced, it’s bc they store very easily and they’re great to have when you’re running low on meat during the winter.

Those ribs aren't overcooked, they're actually undercooked. Funny thing about smoked food is that after the first hour and until it's fully broken down it's incredibly dry and tough. That's why bad barbecue is so gross.
If I remember correctly, the issue was that the ribs were made days ahead. So the 'overcooking' is because they've heated it back up quickly and let it dry out.

I slow cook mine over low heat. 250-275 for about 8 hours, 12 if I have have the extra time.

I always like how Gordon goes to these restaurants and says 'I'm hungry, let me order something' but ends up eating mere fractions of the meals 'cause they're so dreadful. Then I wonder if he has any sandwiches back at his hotel...
Sometimes he eats elsewhere. Sometimes to prove a point, rare times cause he kiterally can't eat what they make. But usually because he didn't eat.
I remember in one episode he was observing a usual dinner service and to show how slow they were making the food he went to a place across the street and ate there and came back before anyone got their food. It may have been this episode or another one.

Every time I got my allowance every week or pay for delivering the Star I rushed over to Mother Pearl's and order her Ox Tail and REAL jerk chicken. The restaurant that was presented today on Kitchen Nightmare's was a nightmare to believe.*
