    I'd enjoy an episode that went deeper into mezcal. How do the flavors differ between Espadin, Tobala, Tobasiche, Lumbre, and Cirial, for example?

    I'd like to hear something more about mezcal, it's often "ignored" by geeks compared to Whisky, Rum and wine based spirits, but it has an extremely long tradition.

      Mezcal is basically the grandpa of all agave spirits, Tequila is a type of Mezcal that uses a specific Agave plant (blue weber). The most popular Mezcal uses espadín agave.

    The mezcal version was fantastic! The sweetness balances the smokiness perfectly. That blue glass though is making me wonder what the tequila version might taste like with a little blue curacao floated on top...I might try that next

    Agave syrup is available widely in grocery stores and Costco in Canada.

    Married a Oaxaqueña, in Oaxaca. Lucky me! Great vid, love anything that promotes Mezcal and it works great in a margarita as it does in many other cocktails, such a complex flavour!

    I make a hybrid of a classic and a Tommy's. 1.5oz reposado, .5 oz Cointreau, .75 oz lime, and .25-.5 oz agave. I toss a couple dashes of orange bitters and salt water in as well. It is really satisfying and has a moderately complex depth of flavor, but is super crushable. I've always liked margaritas to have a little sweetness to them, though. A standard classic is a bit too dry for me to want all of the time.

    After falling in love with a pomegranate margarita (hope it can be called it if lime is substituted with some rich pomegranate juice) at a Galway, Ireland, restaurant, I decided to experiment. Prune juice with mezcal verde worked very well indeed!

    Very much enjoyed this video. I learned the secret of agave syrup and have never looked back. So much better than using triple sec or simple syrup.

    Cara, tequila belongs actually to the family of mezcal spirits, being a specific type from a specific type of agave, while all mezcals are agave spirits. This said, yes, a video on it would be nice. Keep up the nice work!

    Haven't tasted Mezcal. Not available here in India, so "Tommy's Classic" it is. Always a fan of Tequila.

    I have made Tommy's Margaritas with both Tequila and Mezcal, and I have to say that it depends on the day, which one I like better.

    I was on a big margarita kick this past summer. They just sounded and tasted so good to me over other drinks I could make at home. I’ll be trying the Tommy’s recipe next and am also excited to try mezcal as I’ve not had that yet.
    Large ice ball is my preferred way to serve it up too but I don’t like to strain it too much. I find the little ice chips very refreshing.

    I've been to Tommy's, talked to Julio, shared a cigar with him, and had some of his habanero infused tequila! I got my Masters in Tequila, never achieved PhD status - and I haven't been back in decades. LOVED Tommy's, their drinks, their food, and the supersonic speed at which they were able to juice limes.

    It's been about a year since I've had Mezcal and I like it more than Tequila. Spending some time in Baja California a loooong time ago, the Mezcal we got there was horrific and I put off trying it again until about 10 years ago. I'm going to pick a bottle up along with some agave syrup (which I've been eyeing for a while now) and give this one a go. As always, thanks for the informative videos and Cheers!

      You have to take a trip to Mexico City for some outstanding Mezcal, the most popular spirit in CDMX is Mezcal. The rest of Mexico are more Tequila drinkers.

      I can only imagine the quality of the local not for export Mezcal! The last time I had it was in Vegas and was sampling some different brands at a local steak house and they were fantastic.

    Glad to see you using agave syrup. Is it not as common in Australia? In the US, it's practically at every grocery store. In the Southwestern US, it's practically at every convenience store. 1000x yes on the Mezcal video. Please give us the old school gimmicky ones with the worms, scorpions, etc, too.     This is fascinating because this has been my favorite go-to margarita spec for years now but I had no idea that it was a "Tommy's" I don't remember where I found it originally, but it was called a "light" margarita.

    I vote for the classic one because the cup you used means it technically counts as a blue drink, and as we all know blue drinks do taste better.

    Love a margarita this time of year (summer in Australia), and always fun to play around. One of the more interesting twists is using Some Ancho Reyes (either version) which can replace the orange liquor or be in addition. Celebrity brands might looked down on, but I find the Casamigos mezcal to be really nice with a good smoky flavour. Not a fan of the Vida.

    Shoot, just stocked up on rye, absinthe, Peychaud’s plus Creme de violette for some aviation, but now I’m going to have to source mezcal and agave - bottomless pit this but totally sublime. Love recreating cocktails with significant history behind them or, alternatively, something to enjoy at the end of a hot summer’s day! If only I could source Mr Black though!

      If you're in the US and can't find it locally, you could always go through Curiada. They seem to have a good selection of mezcal including the Koch El. And they also carry Mr. Black.

    I was introduced into Mezcal by a Mexican girl. :) And this stuff is really dangerous... at least the one we drank. Very nice in taste! (And I really don't like Tequilla...)

    Funny, I never knew this was called a Tommy's Margarita. It's just how I've evolved to make my margaritas. lol The first bar I worked at made your classic shitty margarita with cheap tequila and cheap orange liqueur. The next place I worked did some decent craft cocktails and I learned the joy of quality, spirit forward drinks, but they did still use orange liqueur. As I got more into experimenting myself and making up cocktails, it just seemed natural to try agave syrup. Orange liqueur was gone soon after so as to enjoy the good tequila and mezcals I was using. Seems like a natural route most cocktail bartenders would take.

    With one of the thicker agave syrups, would you water it down some to get it to pour, or just use less? Cheers!

      Yeah I would usually do about 1 part hot water to 2 parts agave and just check the sweetness is ok 😊

      I like slightly more sweetness to round out the smoke and savouriness of the mezcal, but you can definitely keep it the same proportions as the classic!

      Well booze+sugar+citrus is a sour, of which the Daiquiri is definitely one of the most famous! Then using liqueur rather than just sugar syrup makes it a Daisy, and the Maragarita is the most famous of them 😊

      I’ve had plenty of Tommy’s made with repo but I couldn’t actually find anything definitive on it - have you had it at the restaurant? I used the Blanco to juxtapose more with the heavier mezcal but both are delicious!

      @@BehindtheBar they made mine with Arette reposado when I was there. Though i think they’ll make them with blanco or even anejos sometimes. Delicious either way.
