    Aloo Shimla Mirch ki Sabzi (Potato and Bell Pepper Curry)
    Ingredients:
    4 medium-sized potatoes, peeled and quartered
    2 large bell peppers (any color), chopped into squares
    2 tablespoons oil
    1 teaspoon cumin seeds (jeera)
    1 teaspoon dried coriander seeds (sukha dhaniya)
    1 inch piece of ginger, finely chopped
    4-5 cloves of garlic, finely chopped
    2 medium-sized onions, chopped
    1 teaspoon turmeric powder (haldi)
    Salt, to taste
    1-2 fresh green chilies, chopped
    2 teaspoons garam masala
    2 medium-sized tomatoes, chopped
    Fresh cilantro (coriander leaves), chopped for garnish
    Instructions:
    Prepare the Vegetables:
    Peel and quarter the potatoes.
    Chop the bell peppers into square pieces.
    Finely chop the ginger, garlic, onions, green chilies, and tomatoes.
    Fry the Potatoes:
    Heat oil in a pan.
    Add the quartered potatoes and fry until golden brown.
    Remove the fried potatoes from the pan and set them aside.
    Temper the Spices:
    In the remaining hot oil, add cumin seeds and dried coriander seeds. Let them splutter.
    Add the finely chopped ginger and garlic, sauté until golden brown.
    Cook the Onions:
    Add the chopped onions and sauté until they turn golden brown.
    Add Turmeric:
    Add turmeric powder and sauté until its color brightens.
    Combine Potatoes and Bell Peppers:
    Add the fried potatoes to the pan and mix well.
    Sauté on low heat for a few minutes.
    Add the chopped bell peppers and sauté for a while.
    Season and Cook:
    Add salt to taste and continue to sauté on high heat until the bell peppers start to soften.
    Add the chopped green chilies.
    Finish with Garam Masala and Tomatoes:
    When the bell peppers are slightly tender, add garam masala and sauté for a bit.
    Add the chopped tomatoes and cook on high heat until the tomatoes release their juice and the vegetables are well-cooked.
    Garnish and Serve:
    Garnish with freshly chopped cilantro.
    Serve hot with roti, paratha, or rice.
