Brisket Experiment: Direct Cook in an Offset Smoker

  • Direct Cooking a brisket in my Old Country Pits Angus in the smokebox. Got a select brisket from HEB and injected it with beef bouillon and tallow. This is a quicker cooking method although I let it rest in a 170° oven over night. Let's see what happened.
