    Thank you to the people who let me know I misspoke about the ratios for the Bechamel sauce! The measurements I gave are correct, that's my jumping off point for me, but the ratio is 1:1:8. My mom brain was a little fatigued the day I filmed this! :)

      @@lindawilson290 I think it's personal preference and how thick you like it. I use 3 tablespoons each flour and butter and 6-8 ounces of milk.

    Mindy…I’m an older viewer and have been cooking every day for 55 years 😝 now and I believe you’re doing a great job of teaching people how to cook because the way we shop, prepare food and eat changed quite a bit over the past several decades. I think many folks never learned to cook from scratch, just never even considered it because there is so much ready to eat food available. Nothing wrong with that but I feel it’s freeing to know how to cook. There are multiple reasons I prefer cooking everything…it tastes better, is cheaper, I know what’s in the dishes, and honestly I like that we generate less trash because after most of our meals there isn’t much packaging etc. to throw away. 🤷🏻‍♀️ I truly appreciate what you share with us!!!

      Thank you so much, and I agree with your points! I was thinking about that as I planned this video. I think the way we cook has changed so much, and maybe we should consider reintroducing some scratch cooking to save money. 😊

      Shelz you are so right. I too am an older viewer ,(old enough to be Mindy's mom)! However I'm single and never married. I don't do a lot of cooking for just myself and I am now disabled from a stroke which makes it harder as I only have one functioning arm so I have to rely on my stand mixer and other items to help me in cooking. I love the way Mindy gave suggestions on how to build your pantry gradually and the order in which to purchase items. If you've never cooked before you don't really know what you need and walking down the baking and spice aisle can be very intimidating. I was still of an age where we took home-ec in junior high and I also had cooking badges in girl scouts so I learned to cook that way as well as having a mom who cooked dinner from scratch every night. I will admit I don't have much experience with baking breads other than quick breads like banana bread but I am interested to possibly try something like that in the future. Although yeast intimidates the heck out of me! I have quite a bit of experience baking things like cakes and cookies but bread was never anything that we made from scratch at home. It is amazing how much you can save if you have the time and practice a little making your bread and rolls from scratch. Same goes for pasta as it is all basically flour, oil or another fat and a little water and some yeast. Thank you so much Mindy and we look forward to more videos like this!

    Mindy, when my oldest and youngest moved into their own homes with their wives I made an executive decision to spend about $500 to give them a start off pantry with spices, basics, canned foods (a couple each) and a few extras like towels muffin pans and casserole dishes. I knew both girls loved cooking and trying new recipes so I also put together a cookbook of some of my favorite easy recipes for them to try. Both girls and my guys loved it! My oldest commented to his dad a little while ago how he had no idea how much slices cost till he had to start replacing the ones I had provided lol. I found everything at the dollar general so I ended up being able to provide more than what I originally thought I would. Both of their first Christmases together I got them crock pots and a fix- it and forget it cookbooks another gift they loved. Just an idea for a gift that's both memorable and practical. I thought about this gift and how much it was appreciated when you were talking about building a spice cabinet and thought I would pass the idea along in case others wanted to use it.

      I have 2 granddaughters graduating high school this year and this is just perfect! One is moving in with 3 friends and doesn't cook much, but this would give her the tools to cook nutritional meals for everyone without a lot of cooking skills! 👌☺️
      I grow a lot of different herbs and dry them, and she has already asked for some of them.

    I have been using Frugal Fit Mom’s no knead crusty bread recipe here on TH-cam . It’s so easy. You just mix it up, leave it on the counter overnight, and then throw it in a covered pan to bake. No fuss. No guess work. I get so many compliments for doing very little work👌

    You will change your cornbread game if you bake it in a cast iron skillet! Super crunchy crust yet moist inside. Make your cornbread per recipe but put some or all of the oil/fat in the cast iron and put skillet in the oven while it preheats. Carefully pour your prepared cornbread batter into hot cast iron with its hot oil. That achieves the crisp crust.

    I make the white sauce as a mix that I keep in my freezer. Then I just pull it out and add hot water. 1 cup butter, 1 cup flour, 2 cups instant non-fat dry milk, 2 tsp salt. Then you mix with a mixer, fork, pastry blender, whatever you have until it turns into crumbs. Freeze. Add 1 cup water for every 1/2 cup mix. I use this to make gravy for biscuits by adding cooked sausage and salt and pepper. I also make Mac and cheese by adding salt pepper and cheese.

    My twin boys saw me watching this and said, "Momma, why did she call that bulldog gravy a fancy name??".🤣 I'm from Kentucky and Beschamel is pretty much what my momma called "bulldog" gravy. Different ratios of course but same ingredients. It's DELICIOUS over a big ol' biscuit. 😋

    🌟When I added up the cost of ingredients for the two family meals, it came out to less than $5 for the whole recipe! Serving 4, they were a little over $1/serving, and whenI made them serve 5, it was less than $1/serving. Both those meals were DELICIOUS 😋 and made from pretty basic ingredients!

    Many years ago a friend of mine got as a wedding shower gift a box that was just seasonings Walmart and McCormick mainly! But what a brilliant gift for someone bride house warming gift!

    My parents were given a wedding gift of a high end, at the time, set of pots and pans. At their death, those pots and pans were in excellent condition. They were used 5-7 days a week, 2-3 meals a day, for 60 years. “Take care of your pots and pans and they will take care of you.” Over the years they did replace some handles. But, parts were easy to get. There were repair shops but it could easily be done at home.

    I love scratch cooking and have been doing so for 50+ years. My mom started all of us "helping" at a young age, but we were planning meals with her by the time we were ten and making full meals when 12. Homemade always tastes better! when I moved into my first apartment, my grandma gifted me with a set of essential spices that she'd been collecting for that purpose thru the 6 months or so before I moved out. I've done this with family members as well.

    I've recently started make my own teriyaki sauce as well for veggie stir fry! So easy and delicious! I bought some fresh ginger at aldi, peeled it, grated it, and froze it in ice cube trays so I always have "fresh" ginger on hand for my teriyaki sauce!

      I buy the fresh ginger and I don't peel it but I wash it and cut off any thing that looks like a wart. I cut it into chunks and put it in my food processor and process it into fine pieces. I then pour that into a freezer bag and lay the freezer bag flat in the freezer making sure that the ginger is only a thin layer. Once frozen, I break off a piece and use that in whatever dish I am making. It keeps forever in the freezer and you always have it on hand!

    Mindy, I absolutely love this video! So many people say they don't like to cook, when I ask it really comes down to they don't know how. Where do they start? When I was little I preferred to hangout with my grannies in the kitchen. I watched them, how they facilitated with ease. When I moved on my own I just mimicked them. Later on I really learned to cook when I was trying to lose weight and control my salt.
    Today, with busy lives I believe meal prepping is an extension of cooking. That would be another great video! To me meal prepping is sometimes having things already chopped or proportioned out to save time when actually cooking.
    Thanks again, for all that you do to make us wiser.

    Due to food allergies I have to eat gluten free and dairy free. I like Canyon Bakehouse breads and bagels and they are expensive so I don't buy it very often. A couple of months ago I wanted bagels and got Canyon Bakehouse. The price had gone up and they reduced the number of bagels in bag from 5 to 4. I decided at that point that I was going to learn how to make homemade gluten free bagels. It actually wasn't nearly as difficult as I was expecting. I've been borrowing a lot of cookbooks from the library and scanning the recipes I want to keep.

      Canyon also had a class action recently against it due to its products not always completely being glutenfree. I dont recall as to whether it was just that gluten was processed in the facility or had gotten into the product.

    I have been making bread, rolls, biscuits, french bread, crusty bread for years. I am always looking on how to make different things. Recently I just tried making English muffin bread. I haven't bought regular store bought bread in almost a year. My family asked me to stop buying it a year ago so I did.
    I think the hardest time people have is they are scared of yeast. Yeast was never intimidating for me. Love your videos. I am saving this video to make that white sauce in the future. :)

    I think cooking is still a journeyman's type of skill, meaning you learn on the job. You learn by doing. I have cooked so much over the years that I just know. I can look at a recipe and use it more as a guide. I know how to modify, sometimes per our tastes and sometimes per the ingredients I have on hand, so that it would still work.

    THAT pasta was AWESOME! I don't know why that surprises me. I should expect that from you. It's why I love your channel. I've been a home cook for 54 years, but I love to watch the "back to basics." White sauce is something everybody should know. Your basic pantry list is great not just for those starting out, but for retirement downsizing as well. I've accumulated an awful lot of stuff, and this was a reminder that I don't need to take it all when I move. Great video!

    You can also start heating the milk and add white sauce butter balls( make a mix books) equal part butter and flour make into little balls(small cookie scoop) put in container and freeze! Put a couple in warmed milk or any sauce and thicken as desired! I use these all the time…a time savor for sure❣️….great video!

    I’m delighted by your scratch cooking. I learned to cook from scratch living in the UK but when I moved to North America, all the recipes were a can of this and a bottle of that which was so off-putting. I keep a can of cream of mushroom soup in my pantry for a pinch but actually, I rarely end up using it, because I prefer the flavour, lack of added sodium and the comfort of knowing the contents of my own white sauce!
    Thanks for doing what you do! These are recipes I will try!

    Love the tips at the end about gradually building your pantry! My tip related to that is take a look at the types of food you like to eat, and the recipes you see yourself making over time, before buying seasonings for one recipe.
    Onion powder and garlic powder are good for every type of cuisine and really round out flavor for the most basic foods. If you like Italian food, buy Italian seasoning first before things like basil and oregano. If you like Mexican food, chili powder and cumin are essential. For Asian food I recommend soy sauce and oyster sauce to start, and maybe sriracha or chili garlic sauce if you like spice. Those 3 things are really versatile and will make the best Asian marinades, sauces, and fried rice.
    Definitely be cautious buying ingredients just for one recipe, as you could end up never using them again if you don't like how the recipe turns out! But once you learn which spices you love and use the most, you can buy them in larger quantities to save money!

      I agree. It is why I have several of the Tone's brand of herbs and spices. For those that I don't use often they're cheaper to purchase and keep on hand than a larger container. HYVEE sometimes has a sale on them for $1.25. That can not be beat.

    I definitely need to start making more things from scratch. I love making pantry meal videos and using some of these ideas could make things even cheaper for me. Cooking from scratch can be time consuming, but so worth it with the savings! Love these ideas Mindy ❤️.

    I love these tips for scratch cooking! I am a little bit proud that I have a very well stocked pantry when it comes to spices, baking essentials and things like dried beans, peas and lentils! One thing that has been a saving grace at times is the 'packet drawer'! I will definitely save sauce packets and seasonings on the rare occasions when I take home food - especially useful when making a small quantity or trying something new! While I have a wonderful pantry, I am sorely lacking in proper cookware! I am blessed to have inherited some great quality pots and pans from a delightful lady I have worked for 🌻 I love to cook and your channel has been an amazing resource for myself and my community! Much love and respect 🙏💕🌻

    Saw mill gravy is bechamel with breakfast sausage added and used in place of the butter. Add salt and pepper to taste. Serve on an open biscuit. YUM!!!

    Scratch cooking was required when I grew up as well as being creative with what you had.
    WWII rationed so many things. Cake mixes didn't even come until I was in my early teens. Yes cooking from scratch takes time but it is much healthier.

    Ive watched several of your video's and think you have some great ideas! I cannot use any of these however because of most recipes are too high in carbs. If you dont have special nutritional needs these would work great to feed your family. Thanks for putting out so many interesting video's! Great Job!

    The basic white sauce is a great thing meals. So many choices to do with it. Sausage gravy, pasta sauce, even cheese sauce for nachos. Drop biscuits is an easy starter bread idea. No means or extra steps. Very versatile too, savory or sweet. Thanks for the ideas

    Growing up we didn't have a lot of money. Mom always bought whole milk. Sowhen making the Bechamel she used half milk half water. It didn't effect the taste at all.
    To make the pasta more tasty, I would have built my sauce in the same pan you cooked the sausage in.

    Check the thrift store for a bread machine. I got one for $5 and it makes it so much easier for this working mom to have bread from scratch regularly!

      Oh that’s a good tip.
      I use the bread maker sometimes to just make the dough. Which is the hard/tedious part. Then I bake it in a regular loaf pan in the oven.

      Found a brand new expresso machine, panini press, ninja blender, waffle iron and programmable crock pot at Goodwill. Nothing was more than $9. Have three young adults so furnishing their kitchens was a cinch. Looking like a real generous mom is another advantage....

    Great video Mindy. We're not huge milk drinkers in my house but I always keep powdered milk on hand for baking, making mac and cheese, etc.

      @@zz-ic6vy the package had instructions for mixing up one cup of milk so I just adjust it to measure enough for the quarter cup or whatever for the Mac and cheese. I use about one tablespoon for a quarter of a cup.

    If you don't have milk, or can't afford to put all of it left in the sauce, keep a handful of white gravy mix in the pantry. It's the same thing with just a fancy name. You can take the white gravy and add shredded cheese for a cheese sauce, put a little poultry seasoning in it for white chicken gravy. Anytime you add gravy to something you're stretching the food you have. Pour it over stale bread, add some veggies. Dinner we now have a saying it may not be good but, it's food.

    I made my first beschamel sauce this week for brown rice and creamy chicken. I used whole wheat flour to add more protein, and my whole wheat flour needs to be used faster than AP flour. Everyone loved it. It is definitely something I will be making again and again.

    I love cooking from scratch. I always try to either write out or print the recipe and put a date when I first made it and whether we liked it or we think it needs changed etc. when I remake it again I can see those notes and add to them what I did and how it was. Can also take notes in your cookbook too if you’re using one. Love your videos.

    Mindy, you are amazing! I'm watching this video thinking that I've never made bechamel sauce before. But, oh yes I have! It's the base for the mac and cheese recipe I use. Now you've got me very curious on different ways to use bechamel sauce.

    Oh yes bechamel is a great easy sauce! It’s one of the five mother sauces in cooking 🧑‍🍳 Even just knowing how to use a roux to thicken things is a great skill to have! You can make your own gravy, set up a thickening base for soups/stews, etc.

    Loved all these recipes i agree eith ou tthe white sauce is so nice .i rem yr ago also an elderly neighbour used to make bread sauce and put flavours into it it was deliscious i have never made the bread sauce in our family a lot of the crust gets left .i might use them and try ii or make own stuffing with the left over bread.ive never made my own terriaki sauce looking forward to trying that thank you x

    This is one of my all time favorite videos. I have been wanting to cook more things from scratch and this is giving me the motivation. I am going to try the Teriyaki chicken with the home made sauce next week. I am going to have to keep trying with the Bechamel Sauce, lol mine tasted just like flour and butter (this was before you shared your recipe)

    Prices in the grocery store are increasing daily! I also took home ec in school. We were taught the best way to keep on budget was to plan your meals utilizing what you have on hand. Shop your kitchen first. Make a grocery list! Stick to the list adding only items that are on sale that you know you will use in the next 2 weeks. If you don't use it, it's not a deal. Try to prep ahead to cut down on time spent actually cooking the daily meals. She taught us that it was better to buy a large roast to incorporate into 3 different meals than a small one that would only accommodate 1 meal. It is cheaper to buy in bulk, cook and freeze. Planning is the key though.
    Mindy, I agree with you teaching things like how to make a basic white sauce. It's the base for many sauces and gravy. As for the cornbread mixture, you can always use it to make muffins or even hoe cakes for breakfast with honey or syrup. It can be dressed up by adding canned corn and bacon bits. But, this was a great video that you can continue the theme.

    I make a very simple seasoning sauce by mixing extra virgin olive oil, lemon juice, garlic, basil, salt and pepper. Really good on fish and pork especially.

    Great video, Mindy! Not only is cooking from scratch more cost effective for me, but it also allows me to be in control of how much salt and sugar are in our meals. My husband had quintuple bypass surgery a few months ago and must limit his consumption of both.

      That's very true! One of the reasons I've stopped giving measurements for salt and pepper and just saying "to taste" is that everybody had different tastes and needs there.

    I love this sauce but where I’m from, we just call it white gravy! You can use it plain (or add a little pepper) with toast or biscuits for breakfast, eat it with pasta, use it as a dipping sauce for chicken or even steak, and I bet you could use it on a pizza for a white pie!

    i love this video! im 29, and i was taught how to cook by my family but i know thats becoming rarer and rarer and its such a good skill to have. i wanted to tell you about a recipe i think you would like, the swedish meatball ozro you made a little bit ago i love it, and i made a lasagne type version.
    i used -
    vegetarian mince (what we call ground meat in the uk, you could obviously use actual meat or sausage)
    onion
    orzo
    normal lasagne seasonings
    salt and pepper
    creme friache (greek yogurt or sour cream would work)
    ricotta
    tomato pasatta
    garlic puree
    tomato puree
    i just cooked the mince and onion in a sauce pan, once they were done added the garlic and orzo stirred that in followed by the pasatta, tom puree and water and let it cook until there was 4 minutes left on the cooking time and i seasoned it. then at 2 minutes, i added the creme fraiche then finished the cooking. make sure you stir regularly! and then serve, i served it with a small amount of chilli flakes & a dollap of ricotta on top.

    I made that hibachi noodle recipe when you did it in the previous video, and we absolutely loved it. It was so easy, inexpensive and delicious.😁💕
    I also like to keep the tube herbs (found in the produce wall) in my fridge because they add a fresh herb flavor, and you don’t have all this fresh parsley or basil wilting and going bad in your fridge. I always feel guilty buying fresh herbs because I know I never use it all. The herbs in a tube stay fresh for months. I especially love the tube ginger in things like teriyaki and Asian dishes.

    I always do the bechamel sauce in the microwave-easier clean up and you don’t ever have to watch to make sure it doesn’t scald. Just make sure you use a big enough Pyrex bowl as it can easily boil over.

    White sauce is also the base for (at least one way of making) cream soups. To eat the soup as soup, just add double the milk plus whatever ingredient you want it to be “cream of,” then hit it with an immersion blender if you like. But if your recipe calls for canned condensed cream soup and you don’t have any, white sauce alone can be a good substitute (1 cup milk = 1 can undiluted), or you can cook some mushrooms in the butter before adding the flour for cream of mushroom or add a bouillon cube to the milk for cream of chicken.
    White sauce made from scratch, unlike canned soups, can also be varied for different dietary needs without extra cost. If you need less fat, you can whisk flour into room temperature milk and then cook while stirring until it thickens. If you need low sodium, use unsalted butter and don’t add salt until the dish is complete. If you need gluten free, rice flour or oat flour would also work fine. If you can’t afford to waste any vitamins or minerals, substitute part of the milk with cooking liquid from vegetables or the liquid drained from canned vegetables.
    Like Mindy said, white sauce is very versatile - but not just in how you use it, but also in how you make it. It was one of the first things I learned when I started learning to cook, and it’s become possibly one of the most important tools in my cooking arsenal.

    with the first dish - the pasta - you mentioned, one could give that in a casserole and put it in the oven etc. actually, the pan you had been using - that you could have put in the oven as well. right from the stove to the oven. it can handle it easily
