    I'm from Hungary. My grandma has been making these for decades and we've had no idea they come from Australia until now. My grandma makes the frosting more runny and she dips the cakes into it. You, Stephanie, posting this recipe really takes me back... :)
    PS: Oh, and my grandma adds some rum into the frosting. :)

    As I am Australian, my mother taught me how to make perfect lamingtons...and honestly I had to laugh at the mess you were getting yourself into Stephanie with that chocolate icing. What the secret is...when you have baked your cake and you have cut it into squares you then put the squares into the freezer to become solid. You then prepare your icing and coconut dipping bowl...not plate..next step is to take out your squares ...and with a fork stab each square and dip into the icing...then over the bowl of the coconut spooning around the coconut onto the cake and then placing it on the wire rack. The cakes are done really fast and there is minimal mess. The defrost quickly...and are so so good...Enjoy...

      That's exactly correct, Stephanie made a mess of it, and the shredded coconut is too large,
      The pieces of coconut need to be smaller and more delicate.

      @@youssifnm Hello Youssif - just saw your message - long time ago I wrote that! Lamingtons are easy - but you need to get organised. Mum used to either make a basic sponge (like a victoria sponge) or if you can just buy a plain cake - then cut into lamington size squares and put in freezer. While freezing - make up a cocoa dipping sauce then another bowl with desicated coconut - prepare a tray with a rack on top which you would use to cool a cake on. Now with a system in place fork a square of frozen cake - dip in choc - then spoon over coconut - place on tray - it will defrost in no time and you will have lovely soft lamingtons in no time. Enjoy and stay safe!

    Love how tidy you are! I'm in OZ and most Australians I know just dunk the whole cube of cake in the chocolate and lift it out with a fork.

      Most Australians hollow out the centre of each cake and put a clam in there. That's where they get the name clamingons.

    I made these using metal tongs to dip into the frosting. Less messy. Next time I will tint the coconut yellow and use for Easter. They are absolutely delicious. Thanks for this one Stephanie!

    These are so delicious that I'm almost speechless! I almost doubled the recipe because they didn't look very big, but they make up for it in richness. I don't like using sweetened coconut, especially with quality cocoa, so I found some organic unsweetened just in time. I thoroughly enjoyed this with a cup of cold brew coffee.

    I tried the recipe yesterday and it was super yummy. The cake itself is very soft and well flavoured. The chocolate liquid oitside is too much i had so much leftover. Very good recipe and simple as well. Thank u very much.

    Well done JoB one of my favourites. I do a variation because I have a daughter who doesn’t eat chocolate. I dip in caramel ganache and coat in the shredded coconut which I toast golden brown while the cake is baking. They don’t last long. From Brisbane Australia best wishes for 2021.

    Lamingtons came about as way to use cake that's a little old/beginning to go stale. An Aussie staple! I love cutting mine is half and then putting in fresh whipped cream so it's like a little sponge cake.

    These are one of my favorite little cakes to eat. In the US, we call them coconut bars, although I know their really called Lamingtons. Bakeries think I'm crazy. I've seen them with a raspberry syrup frosting and also yellow & chocolate cakes. These are so good & I love making them! I found that if you store them in an airtight container the flavors blend real well the next day! Yum!

      By using 'precise' conversion only adds to the confusion.
      The simple way is to STOP converting from Imperial to
      Metric and start from scratch with Metric.
      It is the ' Conversion' process that creates confusion.
      Using Metric and having all weights and measures shown ONLY
      in metric and people will soon become used to it.
      To prove how stupid the US Politicians are, I will use your examples of
      "ELEVATION and DEPTH of water.
      (2000 ft) they converted to 609.6m
      It would be certain that the elevation is NOT exactly 2000 feet, and
      has been rounded off to the NEAREST FOOT, yet these failed politicians
      fail to round off the metric measurement to 610 metres.
      Same applies to the "WATER-> depth of (50 ft)" which in reality maybe
      50 feet and 5 inches, thus rounded off at the NEAREST Foot to 50 feet.
      Had those politicians been as intelligent as they imagine them-selves
      to be they would round off the depth to 15 Metres, as in such cases an
      the accurate scientific measure is not required unless one is working in
      Engineering which requires PRECISE measurements.
      With the volume and weight of food, ONLY Metric measurements are to be labeled.
      People are intuitive by nature and can see what the volume is and what weight
      something is, and become accustomed to it very quickly.
      Converting from one to the other causes a mental problem.
      The Auto industry was Metric 50 years ago.
      Most bolts on the automobile are metric, check it out..
      All the component designs from Ford, Chrysler, GM are in Metric
      The USA committed to the metric system in 1875 by signing an international agreement.

      To designate the metric system of measurement as the preferred system of weights and measures for the United States Trade and Commerce.
      Since 1994 both Metric and US customary units have been required to be shown on labels and packaging.
      The US currency is the Metric system, and it is that because the metric system for currency has been made compulsory.
      The reason why people 'Domestically in General use the modified Imperial system is that it has not been made compulsory for common domestic use, Only one state in the US uses Metric for distance Measurement i.e Km. and not Miles.
      Interstate 19 from Nogales to Tucson in AZ is measured and noticed in Km.
      The ONLY U.S. Highway to have Metric Road signs.
      International trade would be difficult with different measurement standards, which is why the Metric System is the international system for weights and measures, including the USA.
      in 1975 the U.S. passed the Metric Conversion act.

    I had no idea these were called Lamingtons! I'm bosnian and they are called "Cupavce" in my country :D I've lived in Sweden all my life though and have never seen these being made or eaten anywhere in Sweden.

      Then you should speak with Selvada. Who is Australian born Bosnian dad - Egyptian Mother.
      Selvada would teach you how to make Lamingtons.
      The recipe given here is close but not quite authentic.
      Also, the coconut needs to be much finer, like small ants.

    True story! My sister made these for a high school fund raiser years ago and sold them for $0.75 per piece. Here's the kicker, instead of making her own sponge cake she used "Twinkies" (look them up if you're not American, sorry). My mother was mortified, but sistah made a killing!!! She called them USA/Lamingtons! Most Americans have no clue what a Lamingtons is. My grandparents were Australian so my mom always made them around the holidays! Goods eats!

    Not a big deal but in Canada it's difficult to get an 8" square pan. Only 9 are available. Just picked one up and making them today.

    looks great, here in the US I have never had lamingtons. however I do not like coconut, how bout chopped nuts instead?
    and one more question, everyone seems to use the kitchen aid, but you use the delonghi mixer, is there an advantage to the delonghi?

      Actually I use a Kenwood Titanium Chef mixer. It is the only brand I've ever used (and I love it) so I really don't know about other brands of mixers. I think you could use chopped nuts instead of coconut.

      This frosting is quite soft and doesn't really harden. You could use a thin layer as a filling.

      You can use a hand mixer or you can make it by hand with a wooden spoon or wire whisk.

      Yes. If using self raising flour I would omit the baking powder and salt in the recipe.

    I just watched the video. Sorry but we Australians must be messy cooks, but to make a lamington that is the only way to be. When you have cut the cake into squares you dip it into the chocolate on all 6 sides. I use two spoons. 1 lifts, the other turns. Same for the coconut. Chocolate & coconut on 5 sides. Sacrilege. No, no, no, no. P.S. Kids love making these. It could be the mess factor but who cares. Life is short. Make a mess, especially when it is a chocolate & coconut mess.

      You could use another type of chocolate frosting. Or you could try reducing the sugar and see if you like the results.

    I'm Australian & lamingtons are not popular in Australia. They're a lot more than that .If you could have a national cake, this is it. I would not be able to find a single person who hasn't had a lamington. Every cake shop, supermarket, fete stall & fund raising drive sells these. Sometimes for girls parties they chocolate is replaced with raspberry jelly. You can slice it through the middle & add strawberry jam & cream. I have seen large lamington cakes for birthdays. I have seen them used in layers for a wedding cake. Having written all this maybe I should start a petition to make this our national cake. Being Australian, we all know anyway. Why bother, just keep making them.

      You need about an inch or two (2.5 - 5 cm) of water in the saucepan.
