I went and found that cool potato ricer that you used also, didn't see any affiliate link here, but it is on Amazon. It works great! Thanks again - I will be using this recipe again and again!
If you use parchment paper, you can turn it around and not tear your tortilla, just turn the parchment paper around. And we use a large pancake type cast iron skillet that doesn't have sides, just a tiny lip.
UPDATE: I just made these GF tortillas with my own GF all purpose flour mix and they came out incredible. I finally found a fabulous recipe thanks to you. This is the recipe I was looking for after many years of trial and error. Who knew that potatoes were the secret. Thank you so much! ❤

(About 2 medium sized potatoes) 1 ½ Cups all-purpose GF flour ½ teaspoon salt 2 Tablespoons olive oil (or any cooking oil) 1 egg Using a stand mixer with a dough attachment, mix the dough until it comes together. If it is too dry, add a little water, 1 tablespoon at a time. It should be soft but not sticky. On a lightly GF floured surface, put a portion of dough, about 1/3 to a ½ cup in size. Pat into a flattened round shape. Thinly roll out a portion of dough, into a circle. Place into a hot pan and cook carefully, until it has a few bubbles and can slide around in the pan without sticking. Flip over and cook the other side until a few bubbles form, again. Remove the tortilla with tongs. Gently remove any excess flour from the tortillas or the pan. Extra dough may be stored in a Ziploc bag in either the refrigerator or freezer.
All Purpose Gluten Free flour. Not regular all purpose. I make a GF all purpose flour and sell it online. But you can also use another kind if you want but make sure it is with Xanthan gum.

made my 1st one today. the dough is very sticky, but it turned good.
not all flours are equal. You may need to add flour depending on the brand.
160g is about 1 and 1/2 dl flour
