Thank you for this recipe. Not sure what the prep time refers to but I have made candied ginger many times and the prep time - depending on the amount of ginger used - is closer to an hour. Definitely not 5 minutes.

I like my ginger slices very thin so use a Mandolin, cook in Instant Pot for 14 mins, pour in a strainer. Save ginger water in fridge and add to coffee, make hot/cold teas, etc, even used as a Facial Toner. I then put sliced ginger in my stainless steel pot, add sugar, mix well, and put in fridge for a few hours Or overnight. Next day cook on stove like she does. Some of the other videos used Tons of sugar, hand dipping Each piece 1 by 1... too much time And sugar. This is Waay better... Making some Right now... new Sub.. =^..^=
Did you add the same ratio of sugar as in the video? Were the finished ginger pieces hard or soft? I liked this method too for the less wasteful use of sugar, but at the end I had trouble getting the sugar to adhere to the ginger pieces. Most of it was instead sticking to the pan.
@@Anione111 - I "usually " make 12-16 oz of Ginger at a time. So after cooking in IP and straining ginger water, I add about 8oz +/- white sugar and mix well. I've found being in the fridge overnight IS Best for desired results. Next day I pour Ginger And the Water the sugar pulled out into a Large pot, bring to boil, stirring... then lower to 250°-270°F. I have to stir Almost constantly to get the sugar water well distributed And to start drying onto the ginger slices... This takes me a Good hour or more sometimes, (I noticed if the Humidity is high that day it takes longer) and Yes the pot Does start to get a build-up of the sugar AS the Ginger gets to That stage where it's Also getting the Sugar dried on, just Keep stirring... The slices turn that white crystal like color and then it is Pretty firm/hard... I could easily nibble this All day and polish off a good pound or more with it cooked this way. With the ginger sliced So thin by the Mandolin you get this Delicate Sweet/hot/spicy flavor and the thinner slices takes it to a new level... soo good.. Oh and All That Sugar on the pot...I put a lid on it, and the next morning I pour 1 cup/water in, heat, and use to make my Oatmeal, or you can add to tea, etc...just Don't waste it, it's Soo Gingery good... I am growing many of the pieces I let sit and sprout so I can Supplement My Ginger Candy addiction with My Own plants. Which you can cook/eat the leaves, flowers, make Ginger syrup, leaves in salads, stews, etc. I have 30+ plants and each month add a few more so I can harvest throughout the yr. I live in Central Florida so rarely gets too cold for very long...gl. =^..^=

Good thing you mentioned how long it takes to be done, as sometimes all that chemistry unfolding can be daunting for a newbie. Does not look like your ginger candy would last very long :), but if kept for a few weeks, does it get soggy? You should consider posting videos of your garden. For many of us who live in concrete jungles, it would be a sight for sore eyes :).

If so, do you know why ... is it because the ginger is allowed to dry out while it is paradoxically soaking in the sugar?

I was wondering, are these usually consumed as any other candy? I just discovered them because my uncle bought some from the supermarket and he didnt like them so he gave them to me. I find them a bit strong in flavor since im not accustomed to consume ginger this way, but decided to put a small ammount of water to boil and now i basically use them to sort of infuse it as if it was regular tea. I find it easier and tastier to eat the bits once i finish the tea since they are softer. Just wondering since where i come from this is not commonly found and i am curious as to how people enjoy them. Hope my way of eating them isnt offensive or a disgrace to anybody haha.

Oh no !! U cut nodules that produce more ginger! Lol 😆 can I cut this into small rock size ginger...? I’ve seen many Chinese cooks use this, and they use thick rock like ginger candied for their recipes..may I also use turbonado,( raw sugar), sugar?
I think the process of cooking the ginger in the water can be skipped? Because this will boil away some of the ginger taste. Just straight add in the sugar to the slices and refrigerated overnight or several hours until sugar is melted.

My ginger turned dark like in 4:20. The end result is unlike the color of the ginger at the thumbnail.

You can slice your fingers . Be careful. There are better ways to slice ginger.
