I was a Mario Kart addict back in the day! I was always DK, and I loved messing with Toad the most. Nail him with a turtle shell just to hear his “AAAAHHHHHH!!!” Guess that says a lot about my personality 🤔
Mario Kart is a good entry point to games because there's few buttons, no camera control, and the rules are clear.
If you're looking recommendations, might I suggest The Stanley Parable? It may seem a bit of a niche choice, but if you search videos on it they get a surprising amount of views, some in the millions. Plus it's a game where you can get 2 or 3 good runs in within the span of a 20 minute video like this. The game is based around a narrator who is telling a story where you are the protagonist. The narration changes and reacts to the choices you make in the game and it can lead you in very unexpected directions quickly, like an old choose-your-own-adventure book. As such the skill requirements to play are basically zero aside from being able to control a first person camera. Give it a go.

This is great, hope to see more! I think the reason your karts felt like they were turning on their own is because you likely have motion controls on for the joycons, definitely recommend you turn that off.
Daz is right about the start, if you just lay into the accelerator from the start you will spin out. If you press it at the right time you will get a bit of a boost off the line. The next step to getting a bit faster is learning to jump/drift for boost.

The key to a fast start time is to hold the button down as soon as the 2 stops moving. Anything after you blow up at the start line.
More games like this! Also, you should move the camera square to the top right of each screen.

I have played video games my whole life and I am absolutely garbage at them. The only ones I do ok with are platform games where I can be a backup person for my husband who is really, really good at most video games. I enjoy watching people play video games though. I guess so I can live vicariously through them. 😂
My niece and I play MarioKart all the time. I told them that they have to play Heave-Ho. If you don't know that game, check out Blindwave's first time play and you will be laughing so hard 🤣🤣

Mike is making a classic beginner mistake, he's not drifting. You have to get comfortable using that drift button because it gives you a speed boost, you can also use it when going over ramps for a speed boost.

The points at the end of the race is determined by position (otherwise the point of a race would be useless wouldnt it?) If it were by coins then racers would spend the whole time collecting coins rather than trying to finish 1st. The reality is that 1st place always gets 15 points, 2nd place always gets 12 points, and so on. These points are then added up over the course of a set of races (usually 4) then whoever has the most points wins. If a racer won all four races they would have 60 points (15+15+15+15).
I'd like to see youse guys try your hands at GTA. Any of 'em. Especially the online world version.
That might be a little to much for them right now 🤣
