Great question! It's okay to use garlic mustard when it's in flower, but I would recommend only using the leaves in the recipe since the flower stalks can be fibrous
If you have thyroid problems or other problem causing low iodine, be aware that mustard family plants do contain isothiocynates, which can block the uptake of iodine. I don't know how much of this compound is in wild garlic mustard or how much isothiocynate you would need to consume to cause this problem, but just offered it to increase awareness. This plant is allelopathic - it prevents the growth of native species thus allowing it more growing room. That's why it's spreading voraciously and is considered invasive. I guess that means we should all go out and get a bunch and make kraut and pesto! Wonder if it can be dried?

A little confused. Stir and press 3 times/day for 3-4 days, then just let sit until refridging at 2 weeks? Burp jar once/ day until refridging?
