I find it quite fun that Arabs and Celts have two separate but intricate traditions for making the same thing, biscuits! We both have different takes on many of the exact same preparations as well such as buttered doughs and moulded fruit filled confections (great minds think alike). Similar tea culture as well, we also steeped other plants like mint and nettle before proper tea made it to us and date maamoul are a top five favourite with my tea to be sure. I always keep them on hand! While I'm not really sure when or how gaelic and arabic politics started interweaving; it's not hard at all to see where the shared cultural affinities come from.

@@loream neutral favor oil (refined coconut oil) and almond flour, psyllium husk, and xanthan gum. You will get a dough that can be filled! You may add any spices you prefer: sometimes we put a bit of: ground cardamom, rose water, orange blossom water!
I wouldn't worry too much about the spices. It does give it s unique flavour but the important thing in this biscuit is the texture. You can just add the spices you have on hand instead. Hope you like it

Kahk actually was eaten in ancient Egypt, and maamoul was later derived from kahk. There's images of kahk making painted on the walls of temples, and they were even carved and stamped like kahk is today. I covered maamoul last year in another video, feel free to check it out.

Even professionals have a hard time getting the texture and the color right (perfectly white yet perfectly cooked and crumbly).
