I gotta say, those little quails are very cute.
Oh, thank you for asking! They were wonderful! The video and instructions helped a lot. I couldn't truss the little things (they didn't stay tight) but otherwise seared very well. I made the pan sauce with the chopped preserved lemon, some shallots, wine and butter. I served the quail on top of thick disks of crispy cheese topped polenta and surrounded them with sauteed spinach and pine nuts. The guests were VERY impressed!
Don't see too many quail recipes. This looks amazing. I hope you do more with the cured lemons.

I experimented with a Quail dish. I stuffed it with Avocado, Crushed Pistachio, Bacon, Potatoes , Herbs and Fried Bread Cubes. I know.... Sounds kinda strange, but it tasted amazing!

Chef, thank you SO much for this one! I don't think I rinsed my cured lemon enough, though, as it left the skin of the birds tasting a little too salty, but I've learned from my mistake, and look forward to trying this again next time I host a foodie's party! It was a great idea to brown the quail first, too, as I think just roasting the raw birds with the lemon sitting on top would have left the skin too soft. In my opinion, the skin is one of the best parts, once nice and crispy.
I have also found that whenever I tell my guests that I'm using a "Chef John recipe" they get super excited, which makes me wonder if I'm not putting enough effort in to my OWN recipes. xD You rock, Chef!

@HollyTheFireNinja love quail eggs! such a guilty pleasure, they are so small but soooo good. I got asked once what i was eating, it was awkward explaining. Did not want to be judged as some one who eat little birdies.

Yea, i'm interested in how to break the eggs and then fry em. It's hard to break quail egg and get it out of the shell without breaking the yolk or get the white all over my hand.

@MrBagginsEsq I guess you could if you wanted too. I like turkey also, and I just think of turkey for thanksgiving. Christmas you could do a ham, lasagna, beef, anything really. A lot of people make a turkey again. I was making a point of thinking of making goose, I love it and I don't think too many people think to make it for x-mas. If you can get one for thanksgiving great, the only time I've seen them out is x-mas.

try craigslist or your local farmers market, some grocery stores carry them in the frozen meats section.
@foodwishes never had quail before. I know you have a duck recipe, one of my faves, but my all time fav is goose. Seems like you can only get it around Christmas time. Around the holidays you should do your outtake on goose. Turn a lot of people on to something new that was the original traditional thing, they will wonder how turkey ever took over. Save the turkey for thanksgiving, once people taste goose they will see what they were missing and never go back.

@MrBagginsEsq You have to keep in mind they don't have a lot of meat on them. You may have to make a couple or make something else also, depending how many people you have for dinner.

I know this video is old. Do you recall if these were jumbo or standard size quails? I'm going to be raising A&Ms(large) and I'm curious how big they are dressed out.
Those are bound to be jumbo. We raise standard coturnix and they are ever so slightly smaller but still a good amount. My husband will eat 2-3 in a dinner usually

@Maanesyge i was just making a comment, it is a type of bird. Lot of people don't know that quail can be eaten. I had a friend who kept them as pets, never going to tell her that i had them for dinner the other nite.
@DevilishJ quails are like mid-size birds, they look kinda like fat birds.
