I think this is an interesting topic to make since there are quite a few of my friends who aren't able to experience the variety of noodles soup in Thailand SOOOO here you are!! and let me know the result of you try to order noodles in Thai!

Here are the vocabulary list:
Gũay-dtěaw ก๋วยเตี๋ยว : noodles (mostly noodles soup)
Sên Yài เส้นใหญ่ : large noodles
Sên Lég เส้นเล็ก : small noodles
Sên Mìi เส้นหมี่ : vermicelli
Mìi Kãaw หมี่ขาว : vermicelli
Bà-mìi บะหมี่ : egg noodles
Mìi Lueang หมี่เหลือง : egg noodles
Wún Sên วุ้นเส้น : glass noodles
Nám Săi น้ำใส : clear soup
Dtôm-Yam ต้มยำ : spicy soup
Pèd Nói เผ็ดน้อย : less spicy
Mâi Pèd ไม่เผ็ด : no spicy
Dtôm-Yam Nám Sai ต้มยำน้ำใส : clear spicy soup
Dtôm-Yam Nám Kôn ต้มยำน้ำข้น : creamy spicy soup
Nám Dtòg น้ำตก : bloody soup
Yen data foo เย็นตาโฟ : noodles with fermented tofu soup (the pink one)
Dtâo-hûu Yíi เต้าหู้ยี๊ : fermented tofu
Mŭu หมู : pork, pig
Gài ไก่ : chicken
Núea เนื้อ : beef
Dtŭn ตุ๋น : stewed
Mŭu Dtŭn หมูตุ๋น : stewed pork
Gài Dtŭn ไก่ตุ๋น : stewed chicken
Núea Dtŭn เนื้อตุ๋น : stewed beef
Sên Lég Nám Dtòg Mŭu Dtŭn เส้นเล็กน้ำตกหมูตุ๋น : small noodles in bloody soup with stewed pork
Wún Sên Nám Săi Mŭu วุ้นเส้นน้ำใสหมู : glass noodles in clear soup with pork
Wún Sên Dtôm-Yam Mŭu วุ้นเส้นต้มยำหมู : glass noodles in spicy soup with pork
Hâeeng แห้ง : dry
Sên Lég Dtôm-Yam Mŭu Hâeeng เส้นเล็กต้มยำแห้ง : dry small noodles in Dtom Yan seasonings
Sên Lég Hâeeng เส้นเล็กแห้ง : dry small noodles (normally if we don’t mention any kinds of meat then it’s usually refer to pork)
Sên Lég Mŭu Hâeeng เส้นเล็กหมูแห้ง : dry small noodles with pork
Sên Lég Núea Hâeeng เส้นเล็กเนื้อแห้ง : dry small noodles with beef
Bà-mìi Géaw Mŭu Daeeng บะหมี่เกี๊ยวหมูแดง : egg noodles with wonton and red pork (normally if we don’t mention “dry” then it refers to “soup”)

Grà-team Jeaw กระเทียมเจียว : fried garlic in oil
Mâi Aao… ไม่เอา... : don’t want…
Sên Yài Dtôm-Yam Mŭu Mâi Aao Tùa-ngôrg Láe Grà-team Jeaw เส้นใหญ่ต้มยำหมูไม่เอาถั่วงอกและกระเทียมเจียว : large noodles in spicy soup with pork, no bean sprout and fried garlic
Gao-lăo เกาเหลา : noodles soup without noodles
Pàd Tai ผัดไทย : fried small noodles with tamarind juice, bean sprout, spring onion, tofu, and egg. Meat is optional, the most popular one is with shrimps
Pàd Sii-íw ผัดซีอิ๊ว : fried large noodles with sweet black soy sauce, pork or chicken and Chinese kales
