Hi Holly. Your food eating doesn’t seem unhealthy just doing what suits you. I do a big stir fry each Friday with enough for three days and a left over which I freeze for the future. I have usually about six in the freezer. I also cut and freeze my Quiche so easy to get a piece out and boil some green beans and peas. I eat the same foods a lot. I eat cottage cheese with my stir fry. I can cook and have been into whole foods most of my life. Thanks for your share.
@@HollywoodHRA Aahh! Batch Cooking. Not heard that term before so thank you for telling me. Yes I prefer batch cooking unless like today I have my slice of Quiche I took out the fridge and am going to cook frozen Green Beans, peas and add olives and apple.
One of my easy meals is nachos: Cook some minced meat with Mexican spices, sometimes will add a can of black beans and/or frozen corn. Top the chips with the meat and some salsa and cheese, and melt. Sometimes melt the cheese on the chips separately first so the chips don’t get as soggy. Lazier version is put some rinsed canned beans on the corn chips, top with cheese, put it in the oven to heat up the beans and melt the cheese, then top with salsa. 5 minute really tired meal, cook a couple of packets of two minute noodles and some frozen vegetables together, either on stove or in microwaves, add some flavouring/sauces, serve and eat.
The microwave potato looked amazing! I honestly didn't know it was possible to cook them in a microwave. I was waiting for you to have a meal from a Nutella jar! 😀
Baked bean pasta is also fairly easy meal. Cook up some onion and minced meat, mix in a can of tomato soup and a can of baked beans and heat it up, and cook some pasta to go with it. Will end up with plenty of meat sauce, so can add some to the cooked pasta and store the rest for future dinners.

Frozen vegetables have been a game changer for me! I buy lots of vegetables pre prepared and frozen, but I also do things like buying loads of onions and using a vegetable chopper to cut them ( I mean loads like 5 or more large white onions) then I chuck the chopped onions into a freezer bag. This is great because I cook with them a lot and all I have to do is take some out of the bag and fry them! This has saved me loads of time and energy. I struggle a bit with the texture of vegetables as well so I buy lots of frozen mixed veg, blend it all up in my blender and then I'll freeze that into ice cube trays, BOOM! little cubes of goodness that can be added to pasta sauce or soup or anything really. This has helped me a lot to get the goodness of veg without having to spend ages cutting and cooking.
@@HollywoodHRA I definitely recommend it! You can also do the same with garlic, there's lots of videos on TH-cam showing how to freeze and portion it out for cooking:)
@@HollywoodHRA I freeze onions and put them in small containers. Take them out when I next do a stir fry or soup. That way I don’t have to cut them all the time. Also I have just started freezing mushrooms.
If you want to try it, I like to make individual mash by also doing the stabby thing to my tater and submerge it in a bowl of water ( I usually put it on my measuring cup 😂) microwaving it for 6 minutes, it’s soft enough to mash with a fork or spoon then add some plain Greek yogurt (for added protein) butter, salt+pepper to taste 🖤 also I love all your yellow vibes….
