Tried this first time and It came out wrong The coating was amazing but inside it was still pink :-/ I'm so upset Tried it again for it to cook longer but the coating was burning inside was still pink Any idea why cooking inside

That's fine, just depends on your pan, heat setting and thickness of the meat. 😊

The oil temperature is far too high if the outside cooks and the inside is raw. Try lowering the temperature.
Bang on a bun....is that 2 hours in the fridge marinate
Hi DARREN, no once you have marinated then leave out for two hours! You want the meat to cook at room temperature 😊
