Seattle and Sushi: Shiro Kashiba's unparalleled legacy

  • Few people have had as much impact on Seattle's culinary community as Shiro Kashiba. It is not hyperbolic to say that he was the driving force in making the city a sushi capitol.
    Kashiba first came to Seattle in the 1960s to work at Tanaka in the International District. Then, he moved on to Maneki, where he opened the city's visit sushi bar, introducing diners to sushi at a time when few even knew what it was.
    In the years since, Kashiba has opened several notable restaurants, including Sushi Kashiba, where he still works the counter three days a week.
    While the longevity of his career is impressive in its own right, it is his approach to food, creating a new Seattle-centric approach to traditional sushi and his willingness to train the next generation of chefs, many of whom have gone on to make their own mark on the city's food landscape, that have helped him build an almost unparalleled legacy.
