You always see that the most genuine and successful people say they never stop learning and are always keen to learn more even if they're on the top of their game. Amazing individual, adorable passionate old dude 😭
@ian legaspi ... and that is chef's master was none other than Jiro-sensei, the 10th Dan of the sushi world, who, at 93, is still seeking perfection, means that is especially true ...
PSA: Kashiba speaks perfect English. I work in the French restaurant literally underneath Sushi Kashiba and see him almost every day. Incredibly friendly and humble, runs a fantastic restaurant, treats his staff with respect and appreciation. I'll be fucking damned if anyone wants to talk shit.
It's funny because I was going to say the dead opposite. I speak Japanese, and during this interview, he's struggling to pull out Japanese words and occasionally just says the English word instead. Clearly more used to English than Japanese after 50 years. Old boy has lived in the States for too long 😂
By far, Sushi Kashiba has been the best dining experience of my life. Even had Shiro serve me one of the three times I've been there. I'd go weekly if I could. If you are ever visit Seattle, make this spot a priority. They do not do reservations in advance, only the day of.
This is epic! I just went to Seattle for a shoot and filmed at Shiro's for the best sushi experience of my life. The combination of fresh local Seattle area seafood and Japanese techniques makes for the perfect sushi experience and a transportation right to homeland of sushi itself... -Mike
My husband and I went to Sushi Kashiba last year and did the Omakase. It was the most absolute freshest fish and most amazing sushi we ever had. So happy to see this video!
I know there maybe comments in the same vein, but I had chills when he described being a pupil of Jiro-sensei, whom many regard as being currently the greatest sushi chef alive today, especially as he was the very first sushi chef to gain Three Michelin Stars, and has kept them ever since ... Another fun fact ... Jiro-sensei is still very much alive and well, and, at 93, is still hard at work in his restaurant ...
The omakase here was a top 3 dining experience of my life. I promised myself whatever they put in front of me I would eat without exception. Candidly, the salmon roe texture and overwhelming flavor was pretty tough for me to get through; had never had it before. But I mean it was 2 hours of absolute bliss at that counter. I highly recommend getting there extremely early to get seats 1 and 2 at the far end of the counter as these are Shiro-san's seats. We were in 5 & 6 and more 'dead center' and while we could see things all around the kitchen, we were never personally served by the master. Needless to say it was still absolutely off the charts considering every chef there is world class.
Holy crap! I live in Vancouver and I just discovered this. Jiro is my ultimate wish list and this is as close to that. Driving to Seattle on the weekend...
For omakase you basically eat until your full. So it depends on your appetite for cost. I basically ate until i was kicked out. Its high grade sushi/sashimi so its not cheap but very worth. My understanding is you can’t reserve over the phone. You basically wait outside the resteraunt couple hours in advance and then get your name on list an hour before opening. If you want chef shiro-san to make sure to call advance to get his work schedule, he only works some days and only serves couple seatings.
I've dined here a few times. Twice with Kashiba himself at the sushi bar. He has another sushi restaurant in Seattle called Shiro, also very good. Both highly recommended for special occasions!
Having such a legendary sushi master, I can see why he has been so successful. He seems to have great passion, and love for what he does. I'm glad to have seen this video. Japanese cuisine, and sushi always intrigues. A lot of their food is so clean, and simple, yet so delicious.
I have been here a couple times and Shiro is amazing. The chefs he works with like Suzuki san are also amazing. One of the best dining experiences I have had. It us definitely worth waiting in line for 3-4 hrs to get a seat at the bar.
Respect to master chef for not being wasteful. I noticed most fishermen In Western Countries Would only filet a fish and throw away the rest of the body. Not Good.
At this point in time, I find it hard not to believe that Jiro-Sensei isn't the 10th Dan Grandmaster of Sushi; from him, many masters themselves have flown ...
I just realized that I went to this restaurant in 2014 by myself when I was walking around the Pike Market. I didn't know who Shiro San was and just wanted some sushi. I spent $120 on the Omakase if I wasn't mistaken. I met one of his students that day I think. It is crazy since that was the first Sushi place I have ever been in Seattle. I also went to Sushi Maneki, the one he used to work at a couple of times.
Amazing! He is old and is one of the apprentice of great sushi chef Shiro-san from subway restaurant in Japan. Already watched the Shiro-san version of sushi documentary and it was great. Thanks for the upload. Really enjoyed watching this 😄 🍣😋
I went to Sushi Kashiba yesterday and sat at the counter. We ordered omakase and it was a great experience. Probably the best sushi I ever had in Seattle.
I ate at this restaurant long before watching this and that's the first time that's happened to me with this series. This is one of my favorites aside from film I've seen about Jiro and Chiba's sushi & sushi stands in Japan for the more traditional style anyway which is the best it's the simplest. This was still one of the best sushi meals I'd ever had but I had no idea about all of this information that's amazing. I knew Maneki was over 100 years old but never would I have thought. The chilled monkfish liver dish at Maneki is amazing. Free the ikura from the freezer at Uwajimaya! Yeah no though that local pickled herring nigiri is a brilliant idea. I live in the same neighborhood as this restaurant.
Such mastery even though the ingredients he used aren't what supposed to be the ingredients that are usually used in making a sushi. Kudos to this man on adapting to local ingredients 👌👌👌
Eater did many high quality videos (not including that so so so creamy lady). I don't understand why subscription is so low. Should be 1M+ years ago. Don't get it.
I was just telling the woman how I'd like to consider Seattle as a place to move to. I've been in Florida for 20 years now, I'm ready to leave. Amazing video, even if we don't move to Seattle, I'll definitely want to visit to try out some of the amazing food available there :-)
PFC Conners just moved here last October from Las Vegas and I have already fallen in love with this city! Food culture and the people are amazing. If you don't mind a lot of rain I definitely recommend it
Others have had the same idea moving here as you, just bear in mind the housing here has got pretty outrageously inflated as of recently because of the influx of people.
Seattle was great 20 years ago, then it was invaded by Californians, now it's just part of the west coast chain of expensive overcrowded cities. Seattle, Portland, San Francisco, L.A, and San Diego, the only difference between the cities is how much rains they get.
You always see that the most genuine and successful people say they never stop learning and are always keen to learn more even if they're on the top of their game. Amazing individual, adorable passionate old dude 😭
he lived in the US for 50 years and never learned the language tho
a T they are being humble & cool though hehe 😂😉
@ian legaspi master yi
@ian legaspi

This is probably the best culinary series on youtube.
You're probably the best commenter on TH-cam.
Nick Solares is probably the best host on TH-cam
When it focuses on food, its unbeatable...... when it gets all left wing preachy, it has the same effect as opening a can of surströmming.
not even close
💯

Did you work at Café champagne?
Sirius Yuan I did! Only left because I moved. Great couple of years there.
I don't out funny that he speaks English but does the entire interview in Japanese.
IN MY VIEW/ Why do you use curse words in the same sentence speaking of the Honorable Respected Chef Kashuba. Shame on you.
It's funny because I was going to say the dead opposite. I speak Japanese, and during this interview, he's struggling to pull out Japanese words and occasionally just says the English word instead. Brothers Green Eats hey mike, you guys are awesome .
Hey Mike. I'm headed to Seattle this summer. Care to list some highlights?
Shiros, Pikes place market, taylors oyster bar, mamnoon, tera plata, sitka and spruce
Thanks!
Thanks bro! Stoked on the stuff you guys did with my boy Zach Johnson out in Denver!
My husband and I went to Sushi Kashiba last year and did the Omakase. It was the most absolute freshest fish and most amazing sushi we ever had. So happy to see this video!
Quote: I am consistently learning something new, and I will continue learning. This chef has a great philosophy and work ethic. I love him.
You know you're getting a quality experience if Jiro taught him. I hope this lineage continues so that the high level of excellence is preserved.
It's a sin to not subscribe to this channel after watching this.
Truly well made.
I had the honor of being served omakase by this man in this very restaurant. One of the best experiences of my life - not sure I've ever been happier.
Thats really nice to say. I can tell you loved his food
If you enjoyed this video, you should see the documentary, “Jiro Dreams of Sushi,”- the Jiro referenced in this video.
thanks for the recommendation :D
Its great!
Jiro's honestly the reason sushi is even eaten on half the planet.
Dude U rocks. Thanks 4 that recommendation
Can't imagine being a sushi fan and not watching that documentary 😂

Thanks Eater for one of the best food series in the world.
We couldn't be prouder to have you in our country. And for you to be shareing your culture with us.
Holy crap! I live in Vancouver and I just discovered this. Jiro is my ultimate wish list and this is as close to that. Driving to Seattle on the weekend...
had the pleasure to try Shiro-san's omakase last year, it was unforgettable and so worth the wait.
Mango can you tell us how much was it and how long was the wait? do we need to reserve before a month or so? please share details.
i know how to google, but it would be good from a person's perspective.

I had the luxury to eat at Jiro's in Japan and Shiro's in Seattle. Although Shiro's was good, it is nothing even close to how amazing Jiro's is.
I've dined here a few times. Twice with Kashiba himself at the sushi bar. He has another sushi restaurant in Seattle called Shiro, also very good. Both highly recommended for special occasions!

so much respect for him. Sushi Kashiba was amazing sushi and experience. you have to do the omakase
how much did it cost you? Curious since I'm actually heading over there in 2 weeks
Respect to master chef for not being wasteful. I noticed most fishermen In Western Countries Would only filet a fish and throw away the rest of the body. Not Good.
Anybody else jump up when he said Jiro was his Master? Jiro-San?? That’s my dude
I was surprised that he was his mentor, such a great moment
yep, and then I thought holy crap, Im going to seattle asap.
Yeahh.!!! Im goosebumps.. when he say jiro sensei teach the foundation to shiro sensei..
At this point in time, I find it hard not to believe that Jiro-Sensei isn't the 10th Dan Grandmaster of Sushi; from him, many masters themselves have flown ...
Every sushi chef got his own taste and his own story thats the reason why Becoming a sushi chef is my passion and my dream aswell

お元気そうですね。
チェンバー ベイ でゴルフをご一緒した時のことを昨日のように覚えています。
シアトルでの益々のご活躍役をお祈りしています❗️
I don't know what you said, but I think I agree with you.
When you have the 🐐 as your sensei. Ur at the right path. Thanks Eater
Amazing! He is old and is one of the apprentice of great sushi chef Shiro-san from subway restaurant in Japan. Already watched the Shiro-san version of sushi documentary and it was great. Thanks for the upload. Really enjoyed watching this 😄 🍣😋
I watched jiro's series of sushi, he is the greatest of all
I went to Sushi Kashiba yesterday and sat at the counter. We ordered omakase and it was a great experience. Probably the best sushi I ever had in Seattle.
the work ethic and dedication to a craft is one of the best qualities of the Japanese people. much respect to them
What a another's nice story of chef sushi master..He brought the traditional food of Japan to Seatle.
Bless him love this video 👍👍👌
Eating at a truly excellent sushi restaurant is probably the most sublime food experience you can have.
These are skills that should never be lost in history...😳😲👍👍
6:00 shrine for his sensei 😭 a perfect student grown into a sensei himself.
I have reservations to here tonight and I cannot freaking wait!!
watching this video made me feel so happy.
Always enjoyable watching and eating japanese food
His master "JIRO" called "God of sushi" in Japan.
Jiro's sushi is fantastic.
That was the best sushi experience in my life so far. It was mind blowing. Worth going to Seattle just for that experience
I ate at this restaurant long before watching this and that's the first time that's happened to me with this series. Salute & love from Indonesia! ❤️🇲🇨
Well, I guess I know where i need to go soon. Love living near Seattle, so much awesome seafood.
i love how the slicing and cleaning of the fish is shown. Reminds of the Japanese Iron Chef competitions
Almost went here a few years ago, but needed to get a reservation. Definitely considering to make that reservation next time I stop by Seattle.
soon as he name dropped "Jiro" I got the chills!! sushi king
You guys always come up with beautiful videos about foods 💪💪🤝🤝👍👍👏👏
Japanese cuisine is simply amazing
The old legend Japanese sushi chef.
This video is amazing and that chef is a KING! Definitely hoping to eat there next time I’m in Seattle 👍🏼
What he does is art; good video congratulations
Sushi godfather holding court in Seattle. He learned from the best. Jiro-san. #legends
He really liked chilling with Jiro
Whattt!!!
Jiro sensei apprentice also the legend of sushi ...!!!
Wowww!!
He finally wrote a memoir, it's well worth the read.
New subscriber!!!:) Thanks for the wonderful footage and detail in every scene! Also, I love the chef’s backstories!!!!
awesome interview and so nicely filmed
Such mastery even though the ingredients he used aren't what supposed to be the ingredients that are usually used in making a sushi. Kudos to this man on adapting to local ingredients 👌👌👌
He's great sushi chef!! 😉
Need this in my life.
Best sushi I've had so far!!!!
I think they have a winner with the sushi/Master chef's passion 🤟
I always have respect for every japanese chef.
Wow.. What an amazing art in the kitchen. Wish i find the sharp knife💥
Eater did many high quality videos (not including that so so so creamy lady). I don't understand why subscription is so low. Should be 1M+ years ago. Don't get it.
the sooo soooo creamy lady ruined them
Now I'm interested. Please tell me more. :P
Qin Woodruf
it's cuz they smell like pooey retards
Qin Woodruf
Great work on this video. It gave me flashbacks to Great Chefs of New York from the 80’s. I was expecting to hear Mary Lou Conroy’s voiceover.
凄く美味しそう。一度で良いから食べてみたい。
This Series need to keep going, like........forever :T
I can retire and do this for the rest of my life..amazing
That sushi looks perfect. It's like sushi you would only see in anime.
SuperJumpReviews // Segue: I’m curious to see such anime. Recommendations, team Sushi Lovers?
really loves the tone!!~~~~..any reference? camera? or anything?
Mashaa Allah what a man... Oh he seems so in love with this work 😊👏. Long life sir.
This video deserves more views
So nostalgic for him and his teacher (Jiro-san). 😅
Jiro is one heck of a sushi chef
Definitely trying this spot next week!
As a seafood lovers I love this video
I love the Omakase series!
i NEED MORE OF THESE! AT LEAST 39 MORE!
6:30
What music is this? It's so beautiful sounding.
im pretty sure its called "faneto" by a chicago raised composer named Chief Keef
Omg.... i'm hungry by seeing this video
His expression juat like he living his dream life :)
I have dined there. It's phenomenally good.
I love japenese people, their perfectionists
So I guess this is the place where Jiro first sent Nakazawa to work before Nakazawa opened up his restaurant in NYC
p0ywave that's right... connection
Yeah I went to Jiro and I remember he mentioned he broke off ties with Nakazawa because he left Shiro’s place in a really bad way
is this where kotaro also trained?
No its the restaurant before this one, he worked at Shiro's, which Shiro sold to the "I love Sushi" restaurants before he opened Kashiba
I love any sushi video lol
The legend what a great chef😊
I was just telling the woman how I'd like to consider Seattle as a place to move to. I've been in Florida for 20 years now, I'm ready to leave. Amazing video, even if we don't move to Seattle, I'll definitely want to visit to try out some of the amazing food available there :-)

is the crime rate pretty high?
Others have had the same idea moving here as you, just bear in mind the housing here has got pretty outrageously inflated as of recently because of the influx of people.

Don’t move here. Below the surface level of high tax and crazy property prices, it is a nightmare of political brainwash and homeless piss.
Oh god that salmon roe. Ahh my mouth is watering.
I need to go back to Japan!
This is in seattle
What an amazing guy he sure know how to make an art
This is me 😍, staring at the food drooling..
Can't believe I've been walking past this place to class for 2 years 😂😂😂
Legendary Woldclass Chef
Always inspired ❤
Please start doing these again
So he was taught by Jiro? Ok, so he's really, really good at preparing sushi. Watch Jiro Dreams of Sushi.
I just love the way on how he pronounced the who name in English sounding way
His master is actually Jiro Ono! The best Sushi master in the world!!! Well that's explain a lot
