    I love the golden color of traditional mead but otherwise - and this is purely my taste - I don't particularly enjoy it until it ages for at least a year...preferably more, and even then only if it's perfectly balanced. I've noticed that, for some reason, as they age they often tend to lose acidity. So the honey character gets very pronounced but otherwise the flavors get muted. I have started to add the acid blend to the the odd traditional I'll make...very rarely these days, but I'm 100% convinced it's harder to make a really good traditional mead than anything else.
    The floor corker is about 3 times more expensive than the hand one in my country, but worth every cent and then some, especially when you need to bottle a lot of mead or wine. That was probably the best "investment" I've ever made when it comes to home brewing...and I put the investment in scare quotes because it really isn't expensive...in US dollars, it's about a hundred bucks, but given how much I hate bottling it has probably been my favorite piece of kit, lol!

      The basics are hard because there is nothing to hide behind. It's a very delicate balance that some never get right. And that floor corker was absolutely worth the buy, it's fast, no guess work, and almost full proof.
