  • Molokhia, also Mulukhia is a green soup made from minced Jute mallow leaves and cooked in broth. Molokhia is a type of leafy plant called Corchorus, Jute mallow or Nalta.
    There are many recipes for how to cook molokhia ( chicken together with molokhia soup, or to keep whole molokhia leaves )

    In this video we shared the family favorite recipe for molokhia dish.
    Ingredients:
    whole Chicken 1.3 kg
    (onion, garlic, bay leaves, coriander, black pepper, salt, 7 spice, curcuma)
    molokhia leaves (800 g)
    olive oil 2-3 tbsp.
    garlic 4-5 cloves
    1. First to take off the leaves of molokhia, wash them few times and drain from extra liquid. Place in a plastic bag and place in a freezer (it helps to blend molokhia well).
    2. Meanwhile prepare a chicken broth (stock). This is what gives to this dish a flavor. Make a well spiced chicken broth. After the chicken broth ready, remove the chicken to a baking tray, sprinkle with your favorite spice and grill it in a oven until golden brown.
    3. Take a frozen molokhia leaves and in a blender, combine 250-300 g of leaves with 2-3 scoops of hot chicken broth. (NOTE! Avoid to put too much broth) Blend it for 1-2 minutes.
    4. Place the big cooking pan and add a blended molokhia with broth. On a medium heat bring it to boil. Cook it for 25-30 minutes. The texture will be changed from bubbly and thick to more liquid, soup like molokhia.
    After the molokhia soup become less thick and not bubbly, you can adjust the density with chicken broth.
    5. Add to the molokhia soup fried garlic + olive oil. ( can use also fresh coriander ).
    Serve Molokhia with rice and chicken on the side.
    you can also eat molokhia with pita bread and chili on the side.

    Big big thank you, habibi Dolma! Molokhia has been a favourite dish for many many yrs. but after moving out of the Middle East, i couldn't find the usual frozen packs or dried ones we get from the supermarkets! I had to google what type of leaves, if i could make my own, and so on.. Till i got lucky today to find ur video, making me learn that d jute leaves (at first i really thought spinach hahah!) i have locally now n this side of the globe can just be used FRESH, following ur steps above. It's so clear, easy and simple, I'm cooking this tomorrow itself, following ur video. Thanks again, keep up d great job. Lots of love. X

      hi, usually molokhia will be made with chicken. You may try to substitute the chicken stock with vegetable stock and finish the dish with fried garlic+coriander+olive oil

    does the heat need to be reduced after bringing to boil?

      hi, yes bring molokhia to boil and reduce the heat to medium low and you will see a bubbling for 10-15 mins, than the texture will be slightly changed after 15 minutes or so
