I think Craig is so likable because he's one of us... He's on the same level. He doesn't talk down to you like some brewers do, he isn't concerned about minute details, and we all really want to brew great beer in our basements, keeping our pipeline full, and put the videos on you tube. Congrats Craig your videos are great!

Side note, I'm a pin lock guy, all of you interested in going the pin lock route should note some of these kegging/carbonating tips don't apply to us (swapping gas/serving lines, or purging with the gas connected as most pinlocks don't have a purge valve). But as always, great info here.
You know its pretty easy to look back at your library of videos, like I do every so often and probably most people do and you will find all of the episodes which have everything regarding the home brew process including all grain !! hint hint.. Your videos are always entertaining no matter how long they are I prefer the longer ones however. Thank you for the detailed instruction on the kegging as I am hoping to bottle tomorrow for the last time and move into kegging and your awesome instructions make it look so easy. been doing kits for the last 2 years and with out your videos I would not have thought of tweeking them, now I have great beer, next step when I have the time & money I will progress to mini mash then full all grain. But who gives a shit beer is beer no matter how it's brewed as long as the result is drinkable. Keep up the good work Caig

I'm brewing a beer for some friends house warming party, and they gave me a short window so this helps a lot. I've been slow carbonating my beer for awhile. this method will help. thanks for the video, very helpful!

Craig, you should consider placing a bit of heat shrink tube over the temp probe from the controller (for water proofing it), then placing it into a bottle of water inside your freezer. This way you are actually measuring liquid temp vs ambient air temp. Cheers 17!
Craig, you should convert your freezer into a kegerator, with proper beer taps, 2x4 frame on top, with taps drilled and fastened through the 2x4's, manifold for the gas distribution. P.S. love your shows! Cheers, "17"

Good video Craig, you are stuck in a quandary about length of vids. but since most people have quite a few subscriptions if you put out 40 min videos you stand a chance of people leaving, too short with no info same result, you always come to the point and seem to hit the middle ground.Love the videos you do walking around the neighbourhood(I grew up top of sherman cut and went to sherwood) and you always chat about interesting things, keep up the good work.-Dave
I think without looking it up in the US you can legally distill a certain amount each year for personal consumption but you can't sell or trade with it because of taxs
Unfortunately, the carbonation process mostly requires cold liquid. It's hard to get CO2 to absorb and stay in the beer when it's worm. When I started kegging, it was winter and pretty cool in the basement, but come summer, I had a lot of problems and had to get refrigeration. You may have noticed that an opened beer will keep most of its carbonation in the fridge, but will quickly go flat at room temp.

This is what Wikipedia says about the practise of Freeze Distillation/Concentration/Fractional Freezing. There is a section down the page about Apple Jack brewing which does seem to suggest that it is illegal to make in the US (i assume as a homebrewer) but not elsewhere in the world, so you would have to look at your local laws as to the legalities of making that kind of beverage. en.wikipedia.org/wiki/Fractional_freezing#Freeze_distillation
Craig I've noticed your beer line is fairly short, I'll be carbing to about 12-14 psi, how long of a hose would be needed to avoid foaming? The hose I use right now is maybe 3 ft long and I have to take the psi down to like 3-4 psi to pour one without foaming I've seen you use yours with your tap right ontop of the keg so i assume your hose is fairly short?

As far as all grain, Ill be brewing a Black IPA soon. Round the first of October most likely. But I am doing an experiment with extract this evening. Want to see what the Sierra Nevada yeast that I harvested from a 6 pack of Bavarian Style Wheat ale, Kellerweis, does in the fermenter! Using some wheat extract syrup and some pilsen DME. 1/2 oz of cascade. Made a 3 gallon batch. Nothing huge, just wanted to see what the yeast will do! lol..
It looks like it's a 5 Cu. foot. A 3.5 Cu foot is square in shape. A 5 Cu foot is rectangle in shape and Craig's is rectangle. I've been looking at them because I'm going to get one myself, and I highly doubt you can fit a keg in a 3.5.

Star San is really not that expensive if you re-use it and never worry about it getting cloudy. I have never heard of any problems from using cloudy Star San. A small bottle can last a year or more.
Yep Martin is right. I'm talking about cask ale that has very little carbonation in the body of the beer, though you do get a decent head. The closest to that you can do at home (that I know about) is by using a pressure barrel, which is what I do. The problem is always getting the right serving temperature because I don't have a cellar to keep it in. If you put a pressure barrel in a normal fridge it loses carbonation rapidly. A normal fridge is too cold.I was interested in the temperature controller you were using. Made me wonder if I could use one in a normal fridge. Or in a freezer but with a higher temperature than you might set it for.
Hi Craig serious question. I have a wee heavy bottled and it's currently sitting at 10.5 ABV. It sat in primary for six weeks and then in the secondary just to help clear it up for another two weeks. At this point it's been bottled for over a month and has no sign of carbonation. I don't plan on drinking any until late November however I'm still worried it won't carbonate. I'll check on it again in 30 days any thoughts. I used Scottish ale 1728 yeast.
One possibility is that the yeast fermented as far down as it can, and died. Without live yeast, the beer won't carbonate. Scottish ale 1728 yeast has an ABV tolerance of around 12%. You are very close to its limit and if by chance it wasn't very healthy, it might not be able to make it all the way to 12. That might explain what's happened. Let's hope I'm wrong. All else fails, chill it down nice and cold and call it a barley wine. Good luck.
Force carbing this way is great if you like to drink unconditioned beer fast. My preference is to leave reg at 12 PSI to carb and condition over two weeks. Would you not have mentioned brewing or even tasting these 4 or 5 all grain batches in your HBW videos over the two years. This isn't home chilli Wednesday so wouldn't have expected you mention that. Maybe I missed it somehow. Stir plate was great. Cheers
I can't remember if I ever mentioned a beer being allgrain or not in a Wednesday video. A couple of batches were only small experimental ones, so I might not have bothered. A lot more goes on down here than what people see on camera. Maybe if I had given those beers more attention on camera, there wouldn't be as much question as to how much I do all grain. But to be quite honest, I prefer extract brewing because it's quicker and the results are much the same as with grains. I do know that if I didn't devote two or three nights a week on videos and live broadcasts. I would have more time to do all grain. I'm not complaining tho, I like making videos and doing live shows, and I still have great beer to drink. Cheers!
I know that, certainly where I am in the UK, distillation only applies to using an actual still do concentrate alcohol using a still and heat, it does not apply to freeze concentration, and there are UK TH-camrs making vidoes of the process
Hey Craig, any experience using nitrogen for kegging instead of CO2? I'm guessing it might be pricier. Also, I wonder if one could blast a keg with liquid nitrogen for super-fast freeze, but that might venture into the realm of explosions heh.

Sometimes I just carb it and drink it, other times I'll let a batch sit and age for a week. The beer gets clearer and a bit cleaner. Many times I'm doing an IPA and really don't want to age it much because it loses hop character. In general, I'll leave a beer in the fermenter for a while if my pipline is good, and then keg it, carb it, taste it all in the same day.

I think it's a 3.5 Cu. Foot, but I would make sure your kegs fit. I can only fit two kegs in mine, but that's all I have anyway.

no-rinse? i use Sodium Metabisulphite and it says nothing about being a no-rinse sanitizer on the bottle, to my knowledge it must be rinsed off

But to be quite honest, I prefer extract brewing because it's quicker and the results are much the same as with grains. I do know that if I didn't devote two or three nights a week on videos and live broadcasts. I would have more time to do all grain. I'm not complaining tho, I like making videos and doing live shows, and I still have great beer to drink. Cheers!

I know that, certainly where I am in the UK, distillation only applies to using an actual still do concentrate alcohol using a still and heat, it does not apply to freeze concentration, and there are UK TH-camrs making vidoes of the process

Hey Craig, any experience using nitrogen for kegging instead of CO2? I'm guessing it might be pricier. Also, I wonder if one could blast a keg with liquid nitrogen for super-fast freeze, but that might venture into the realm of explosions heh.
I believe using nitrogen requires a different serving head. I've never used it.

Great HBW, I dont keg, but probably soon, tierd of 2 years of bottling, but its nice. Sometimes, haha! Quick question Craig, lets say you brewing a Coopers kit, do you age it in the keg, or do you just carbonate it and drink it the next day. Cheers, awesome stuff.. Cya next week :) 17 !
Sometimes I just carb it and drink it, other times I'll let a batch sit and age for a week. The beer gets clearer and a bit cleaner. Many times I'm doing an IPA and really don't want to age it much because it loses hop character. In general, I'll leave a beer in the fermenter for a while if my pipline is good, and then keg it, carb it, taste it all in the same day.

it's actually called fractional freezing and legally is not considered distillation.
