Thanks so much Joe. Believe it or not, the music I put in my cooks can take hours to pick. Sometimes ill go through 20-30 + songs to find the right vibe. If I can't find something new I have about 5 repeats that I use. I dig the music as much as the food. Thanks for noticing.
I've noticed the trey under the meat makes cook time longer. What about a higher temp? This is the only way I cook my pulled pork now brother, phenomenal bark
Great video. The butt looks awesome. I've got a 9 lb butt in the freezer I need to smoke. I've always wrapped mine. This no wrap looks great. Keep smoking and Happy Sunday.
Tommy, I haven't ever smoked a picnic roast skin-off like you do here, I normally smoke this cut to a lower 190F and then slice it, I think I'll give this a try tomorrow!
You hit a homerun, I always take off the fat cap I think it renders the internal fat better and it distributes it thru out the pork. Very nice bark. I chuckled when you said 8 hours you put the maloik on yourself. Great job

Wood runs the first 2-3 hours on this cook.
