In 2019/2020 for a short time i had an 26" Engwe (EP-1?!) mtb ebike with additional handthrottle. You could ride by this 35 kmh uphill and reach about 120 km distance with mix of throttle and cycling (it even recharged the battery while breaking). Foldable and with a much better quality i had expected. I paid only about 700 € including delivery....at this time ebikes were something new in germany, with prices from 3000€ upwards. Hey Bill, sorry I missed this. It's a pretty heavy bike, especially with two batteries, so you could do it on flat ground if you needed too, but it wouldn't be very pleasant or quick.

Get a Wired Freedom, 60volt 1500 watt hub motor. 45MPH out of a 35 Ah battery packs.
