Mother is going on pouring water every now and then in the hot gravy ...🙄.....when the gravy is hot on boiling temperature its always good to put hot water to add on the gravy not cold water ...
When cooking in small quantities, the drop in temperature due to adding 100ml room temperature water does not affect the end product as much as adding 20 liters during bulk preparation. But yes, what you said is the correct way to do it. Professional chefs always keep a cauldron of boiling water to hydrate their dishes when cooking.

Hot water is needed only for rice items...otherwise we use normal water like this.
