    Looks so simple, great idea. You could probably use it for a desert custard too with some vanilla and sweetener. Nice idea for busy people.

    I was trying to figure out a very simple and easy neutral "base" for sauces without oils. So many others involve blending, cheese cloths, etc - ie, work. This is exactly what I was hoping to figure out. Thank you!

    Just tried and it works! I added turmeric, garlic powder, salt and coconut butter. (Base almond and oat milk)Mine came out lumpy so I have to blend it 🤣 thanks for this video!

      I make a nacho-style potato-based vegan cheese sauce but substitute cannellini beans (rinsed and drained) for the cashews - I can’t eat nuts either! I’ve found cannellini beans sub great for nuts in anything that uses them to thicken or add a creamy texture. But excited to try this one since I need a mozzarella-type for pasta and pizza!

    I absolutely love this! One of the best tasting vegan cheese sauces (and so easy to make) that doesn't use nuts or oil. An excellent base. Just added salt, garlic powder and red pepper flakes but will experiment with this depending on what I use it for. Used soy milk (did not like how it came out with almond milk) but will try others as well.

    Yesss!!Such a simple recipe and great base ...def trying this out and seeing what kind of spices 🌶️ I can add to it.Probably going to be smoked paprika,turmeric,chives and crushed black pepper ...possibly nutritional yeast too.

    Excellent base! I tried it and added some vegan cheddar cheese and made macaroni and cheese casserole my question is I’m going to bake the casserole tomorrow. Do I need to add anything to the macaroni with the cheese to keep it creamy on it or will it melt in the oven?

    Glad I was brought to this page again. To he honest I was kind of turned off with the idea of oat milk as the base -- but now that I see you can use other things, including almonds and cashews (and more) I see this is my favorite mozarella recipe (which I only knew how to do with cashews before)! Did you figure this out yourself?

      Yes and no - I saw a ton of recipes for vegan mozz and realized the two things they all had in common was milk and tapioca. I decided to see if that was enough to make a base recipe for any sort of cheese I wanted and it ended up working!
      I like to whittle things down to their most basic parts to see what magic can happen with simplicity. :)

      I have no idea what’s going on with this video. 😭 it’s the second time I’ve uploaded it because the first one slowly degraded until it was so blurry no one could see anything. And now this one is having all kinds of problems.

    So milk and starch form the backbone, then add whatever to flavor. Hmm.
    I guess adding starch to plant-based milk is the equivalent (sort of) to raising the milkfat percent. I’m guessing you can add a little starch for a cheesy sauce, more for a butter or soft cheese consistency, and more still for a harder cheese?

      It coagulates the milk in the absence of casein (milk protein). If you want to raise the “milkfat” I recommend whisking in a little vegan mayo. It has emulsifiers so it won’t separate, and you’ll get a much creamier result!

      If you want the cheese to set, the easiest ways to do that are to add a little agar agar or carrageenan.

      Yes you definitely can! Tapioca and arrowroot are so interchangeable that some brands actually use the same product no matter the label.

    It is probably better to use a high fat milk, which is milk made from any nut that has high fat content (cashews, macadamia, brazil, hazlenut, etc.)

    I don't ever buy or use any kind of milk, can I just blend oats and water and instead of straining just add the tapioca and whatever else?? I hate straining oats they take forever, I can handle the extra fiber. (BTW, love the brand name on the tapioca!!! lol)

      I haven’t tried it that way, but it should work! It won’t be as pretty or as smooth, but you’ll still get a cheesy base sauce (theoretically). Let me know if you try it and how it turns out!

      @@CookingOnCaffeine It came out fine! I added 1/2 cup of oats to the blender along with 1 TBS each of hemp hearts and tapioca starch and dry blended it into flour. I have a heat safe blender so I boiled 2 cups of water, added it directly into the blender and let it run on high until it thickened, no pot required. It came out silky smooth and pretty thick because of the cooked oats.

      It’s even more tasteless than oats porridge. LOL
      That’s the beauty of it, though - it’s a neutral base to build flavors on. It provides the structure and texture and you add whatever you want for taste.
      I love turning it into choriqueso and also into pizza cheese. The options are endless!

      Thanks for your comment! At the 5 minute mark, I start talking about the two ingredients for the base: plant milk and tapioca starch. That’s it.
      Also, the recipe link outlines just those two ingredients.
      This recipe is meant to be added onto for whatever flavor profile you’re looking for. So it’ll need more ingredients if you want it to actually taste like anything (also outlined in both the video and the recipe post).

    Nice video but did you know caffeine is a drug? Your body is precious . Caffeine raises your blood pressure 15 points plus reacts poorly on the brain I pray you will become free time 💜💜💜

      @@CookingOnCaffeine yes, the rpoblem is actually the inviromental huge harm that coffe does to the earth. You can try Inka if you want, it’s great and just as coffe, and really nutritional!
