Hi Chiara, the language in these videos will be understandable for Modern Hebrew speakers, but will probably sound old-fashioned to them. Kind of like Modern English vs. the language of the KJV.
Yes, there is a dual form in Hebrew, but not for all nouns. Most nouns have just singular and plural forms, many body parts have just singular and dual forms, and only a few nouns like units of time have all three

Are you referring to כִּי אִם־ ? That comes after a negative and means something like "...but rather..." As in, not __X__ כִּי אִם־ "but instead" __Y__ אִם sometimes would be translated 'if' and sometimes as 'or', and others depending on the context...
