I have only made 1 comment and that was on Nan Simonsons podcast so I usually don’t comment but I was so excited when I came across . I immediately made it and I was so pleased with it . I’m going to eat it as it is but my imagination is getting carried away thinking about using this as a base for other soups like adding nutritional yeast and broccoli for a cream of cheese and broccoli soup as well as many others .Thank you I love this . I also bought your new book .
I make this soup often, and I add a touch of nooch. I never thought about making it in the Instant Pot. Great idea! Thank you! (I'm new to using the Instant Pot.) 😊
I’d use vegetable broth instead of water and add some onion. Apologies if this has been mentioned already, but I haven’t been able to watch the whole video yet.
Impeccable timing, I will be coming off a 10 day Master Cleanse and was just thinking about doing this soup from your other video with him where he did the recioe.
Yummy 😋 Bravo Soup. I agree I love 😍 to keep the skin on potatoes because as Chef AJ said a lot of the nutrients are found in the skin. Love 🥰 the video and love ❤Chef AJ.
I made this delicious soup but first sautéed a half an onion and water and a couple of garlic cloves and at the end of squeeze of lemon and I’m sure it was just delicious without that but I really enjoyed it this way as well. Thank you for sharing.
It looks like AJ used approx. 1 kg - 2.2 pound of potatoes (based on the weight on the bag of potatoes she used which I dont believe was a full bag) Equal quantity of zucchini as per recipe so 1 kg - 2.2 pounds When she had finished cooking and open the IP you could see the water almost came to the max fill line of the 3 quart IP so based on the rough water displacement amount I would say 1 litre of water - 1 quart - 4 cups depending on what measurement systems you like to use. You could always just put in the minimum amount of water to cook required by the 3 quart IP which I think is 1 cup and then add boiling water from a kettle once you start blending to get the desired consistency.

Without salt, it's not good, it's bland. I've been making potato-zucchini soup for years. I use broth, cook on stove, and mash with potato masher. It's easier than fooling with that Instant Pot. I sometimes add herbs or something spicy and salt as needed, depending on the broth.
OMG. I will be making this for sure. I will be using other vegetables as well.
Made this today- variation added 1/4 cup reconstituted dried well your world dried veggies

Making this tomorrow, can't wait!
This looks good! And just in time for cooler temperatures outside!
I've made this (in a regular pot) after watching your interview with chef Bravo and it really is good!!!
I LOVE this soup and make it often. Thank you, Chef AJ!!!!

Love the simplicity! Is it equal parts of potatoes and zucchini by weight?

2 pounds peeled Yukon Gold Potatoes chopped
2 pounds Zucchini, chopped

Aww--thank you!
Can’t wait to try this. Did I miss how much water to add?
I would start with at least 4 cups or a quart of water for that amount of potatoes.
4 cups

I have this soup made with yellow zucchini in my fridge right now! YUM! Thanks, AJ! 💕
Laura, does it change the taste if you use the yellow squash? Thanks.

Chef AJ - how much water did you add - and is everything just doubled for the 6 qt IP, including the amount of water?
