    Probably a stupid question, but once boiling after you add the milk, do you then remove from the heat entirely while it steeps? Made my first cup today, really enjoyed it! I was tired of “cafe” bought chais that were incredibly too sweet, happy to make them at home to my taste.

      We recommend bringing to a boil once the milk has been added, this allows all the flavors to extract !

      @@KolkataChaiCo The bag says to "boil" with the milk and then "steep three minutes." I think the question was how to do the steeping part. You seem to skip it in the video.

      I had the same question... Do you leave the pot on the heat during the "steep" for 2 minutes step or remove from heat and "steep" ?

    Do you take it off the heat while it steeps for 3 minutes or do you boil it the whole time? I can't figure this out, the instructions dont say and neither does this video since he puts it back on the stove after it boils

    Another person who’s confused by both the video and your written instructions. When it says “steep for 3 minutes” after boiling the milk, do you completely take it off the heat to steep?

      When you steep, it is always off the heat.

      Never steep while boiling. Will be bitter or take away nutrients. When you take off heat. It’s still hot. As with any tea msking

      basically making a sort of caramel. interesting flavor. I make sugar syrup for pancakes--its very tasty.

    I never mix ginger with milk tea. The idea seems so strange to me even though I'm South Asian. Have you tried this recipe with other milk substitutes? Between soy, almond, or oat mylk, which would you recommend?

      If you want it to taste mostly authentic, use oat milk (barista blend)

      They use oat milk in their cafe and it’s pretty good

      almond milk is mostly water and the almonds are sprayed with pesticides on a regular basis. Avoid unless Certified Organic.

      Oatmilk works great for a non dairy alternative! Don't be afraid of ginger, it has amazing health properties and give chai that inimitable zing :)

      My wife’s family is from Kerala. The way her and Amma taught me to make chai was with cardamom, cinnamon and ginger. Definitely adds a unique kick!
      Will have to try adding some cloves and black pepper

    Ok. So do people simmer for 3 min After adding milk or do you bring the milk to a boil then kill the heat and wait 3 min?

      @@KolkataChaiCo The instructions aren't clear about the steeping part. Remove it from heat to steep? Keep it boiling the whole three minutes? Keep it on the heat but reduce to a simmer?

      The package I got says 1 cup of milk or milk alternative.

      Our recipe calls for a 1:1 ratio of water to milk so in this recipe we're adding a cup of milk to a cup of water.

      We do this all the time! It stays great in the fridge for 2-3 and tastes great when reheated on a stove top.

      You should never preserve chai and reheat and use it. It’s best had fresh. Reheating not just affects it’s taste but makes it loose it’s nutritional value and it’s known to be harmful to the body.

    I don't like to boil milk - think it's better when not heated so high. Can you just add milk to prepared/boiled tea & spices?

      high heat lets the spices and tea extract properly into the milk and water for a deep and rich chai -- adding cold milk will lend itself to a lighter brew, which is fine if that's what you prefer!

      it's about 30 mg of caffeine per serving, but varies on how long you steep it for and how much chai mix you use
