    One of the worst mistakes I have ever made, was having chai in India. Nothing in the states has ever come close to that experience. I have wanted to go back to India just to drink chai ever since.

      You went to India and didn’t have ONE cup of tea?!?! You cannot make the same chai in US because the milk is very different.

    The key to making a good cup of chai is to get black tea leaves and ruthlessly boil it!
    Then add milk and sugar and again, boil it! Boil it until all flavors have been extracted from those poor darn leaves.
    All the ginger, black pepper, cardamom, etc are add-ons. Chai is perfectly alright without them.
    I speaketh as a single professional with something always missing in kitchen (except for salt and 3 holy grail spices - red chilly powder, coriander powder, turmeric powder).

    How is this revolutionary? I make traditional Indian chai at home with whole "fatty" milk almost everyday. It doesn't involve a secret or difficult recipe that requires extensive research from streetside shops in India.

      Tom Marvolo Riddle It’s really difficult to create the same experience. The milk in America is really really different. I’ve had a lotta chai in both countries and the difference is mind blowing.

      Tejas Kulkarni, I don't think I agree with that. Slightly watered Whole milk always works for me.
      It might not beat fresh milk, but certainly beats the tea we get at railway stations in India, and is a close enough approximation to streetside chaiwalas. Perhaps my taste buds aren't fine tuned enough to notice the difference. But given that this tea shop uses American whole milk too, I don't think there's something unique that tea stalls in India do that's hard to replicate.

      George But still, if he’s successful in recreating the chai in the US, it’s revolutionary. The milk here is very different so it’s almost impossible to get the same taste and texture. On a commercial scale, even more variables.
