Not "wine" as in the thing made from grapes, that thing is too low in alcohol content to fully get rid of the meaty/fishy smell from animal proteins and the smell will also make the whole thing off putting. What's often used in Vietnamese recipe is our Vietnamese rice "wine" or sometimes the "wine" made from corn, coconut, etc.

It's not live. If the shrimp is already red, no way it's still alive or moving. The movement was probly by air bubble inside or by boiling water. Also you should see how Americans cook crawfish in large batches, boiling is a quicker death than just leaving them to slowly die outside.
