The problem with the food service industry across the country is inconsistency & cutting corners. And just because you host Sunday dinner for the family or are the cookout champ in the family doesn't mean you need a restaurant.
I see it all the time. The key is to cook for total strangers or people who aren't family or friends and watch their reactions to your food. When people you don't know are telling you they would buy your food or constantly requesting it from you like a bag of exotic weed, it maybe time. But no, the cookout warrior on the weekends INVITING people over for FREE food is not that guy.
It's like hes going out of his way to not eat at any of the known good spots. I live in St. Louis and he hasn't been eating anything I've ever heard of before besides Crown Candy Kitchen.

Man you can take one look at the google pages for places like that and see the food is trash. If you insist on trying barbecue primarily-- Pappy's is the best ribs in STL, Bogart's a close second. A TON of people have been telling you to go to Sugarfire, the owner is a winner from Beat Bobby Flay and the food is really good there but it's more new age barbecue.
East St Louis is my home. Welcome to my city. I’m disappointed that you didn’t have a good experience. I wish you could have tried Sandy’s on the South Side. I pray that you return and are able to get some good Q. Also C&K BBQ in St Louis is equally as delicious. Two BBQ establishments, owned by families that are staples in our respective communities. Brother Chimetime, let me fill you in on Big Mama's. When Belleville, Illinois was around 75% white a place called Big Mama's opened up to give US a place to get Black people BBQ in a white city. They then moved to the hood (East St. Louis) my hometown! To be honest they are nowhere good as a place called Sandy's that was around in the 80s/ 90s. They always mess up my food too. I've eaten there about five times. You are right a lot of places here depend on that sauce, but a lot of these other places depend on that liquid smoke. Avoid Bandanas for that reason. You can taste the liquid smoke.
Why do think that you need to look through a race lens at food? Black people BBQ? How about GOOD BBQ? I have eaten plenty of BBQ and all other foods cooked by white, black, and Mexican people in Texas. The color of the cook never matters. What does matter is whether or not the cook can cook great food. Please elaborate as to what Black people BBQ is?

@dmdm9198 My taste buds are just fine. It's missed up that he aired the video of Pappy's today, and it really did not look anything like that when I went 3 years ago. From the way that video turned out, I would want to eat there myself. But I can truly say whoever is back there prepping the meats, especially the brisket, should be fired on the spot. The brisket I had was sliced 1/3 inch thick. It was juicy and seasoned well. The ribs were also seasoned well and was Fall Off The Bone. If I was a TH-camr back then, I would have given them a 7.8/10. But seeing his video on them earlier today and watching how bad the quality went down on their food, I would have been a little bit more generous and gave them a 1.1/10!

I lived in St Charles, on the other side of St Louis across the MO river as a traveling nurse in 2018. The best BBQ I found was at a place called Sugarfire Smoke House. I also went to Kansas City, where the real MO BBQ can be found. Great brisket and burnt ends, reach out if you go there.
You doing all these food reviews in the Midwest, you gotta hit Cleveland and Cincinnati next, you won’t be disappointed, decent bbq out there, and a lot of good black owned restaurants
I don't know if you pre-recorded some of these or not but there is one place that you should try here in St Louis. C & K BBQ on Jennings Station Rd. Get the Pork Link Sandwich with extra Potato Salad on the sandwich. I've never been disappointed with that sandwich I hope you won't either. If so come back next time ✌🏾

Amen!!! Quality BBQ doesn't need sauce! The last brisket I ordered, which was lean instead of fatty, was so dry and flavorless that I ended up throwing it away. Unfortunately, the sides weren't any better; the mac and cheese, greens, and potato salad all followed suit. Even the banana pudding was a disappointment and ended up in the trash as well.

Check out King Prince in St Louis if you want some GOOOD barbecue, there is also good chinese at the rice house. The best chicken wings are in E,St Louis on State St. at Kam Wah Chop Suey.

I lived in St Charles, on the other side of St Louis across the MO river as a traveling nurse in 2018. The best BBQ I found was at a place called Sugarfire Smoke House. I also went to Kansas City, where the real MO BBQ can be found. Great brisket and burnt ends, reach out if you go there.
You doing all these food reviews in the Midwest, you gotta hit Cleveland and Cincinnati next, you won’t be disappointed, decent bbq out there, and a lot of good black owned restaurants

C & K BBQ on Jennings Station Rd. Get the Pork Link Sandwich with extra Potato Salad on the sandwich. I've never been disappointed with that sandwich I hope you won't either.

Facts on the sauce take. Covers up all the discrepancies and imperfections. Super fast grilling is the technique in the region. Been saying it of over 15 years. Good que dont need no sauce.

Amen!!! Quality BBQ doesn't need sauce! The last brisket I ordered, which was lean instead of fatty, was so dry and flavorless that I ended up throwing it away. Unfortunately, the sides weren't any better; the mac and cheese, greens, and potato salad all followed suit. Even the banana pudding was a disappointment and ended up in the trash as well.
BBQ Haven in Alabama does not need any sauce. I think the city was called Enterprise, Alabama. I will stop by there again!

Check out King Prince in St Louis if you want some GOOOD barbecue, there is also good chinese at the rice house. The best chicken wings are in E,St Louis on State St. at Kam Wah Chop Suey.
