Making popping candy requires a pressurised environment. Something Clair could not do as she lacks the tools required to do such a thing, and she doesn't seem like the kind of lass that'd take the kitchen to the machine shop, and the machine shop to the kitchen. Long story short, you need to carbonate molten sugar in the same manner you'd do a sparkling drink, and then cool it rapidly to form what are effectively millions of teeny tiny compressed air bombs inside sugar, so as the sugar dissolves into the water in your saliva, all these bubbles of compressed CO2 can finally explode. Thankfully, these bubbles are so small that they're safe to us. This however, due to liquid sugar not being as willing to dissolve gas in, like cold water (hot things in general don't like dissolving gases into them, which is why cold water fish will suffocate in warm waters, due to the lack of dissolved oxygen they can get into their gills), means that this takes like 40 bar worth of pressure which is kinda scary to even think about for even 100 grammes of sugar. Seeing as your average bottle of coke is at around 3 bar (1 bar being roughly equivalent to an atmosphere's worth of pressure's difference), and that can do scary things if it fails to keep that pressure inside, or vented safely. 40 bar worth of pressure is something you need deliberate investment into to be safe. You could "cheat" and use bicarbonate of soda and citric acid like some fizzing candies do, but they don't have the same explosive popping mouthfeel due to a slower chemical reaction, more akin to sherbet. For Clair's sake. I really hope she doesn't do pop rocks. Their insurance likely doesn't cover it.

Yea, but Pop Rocks is more of an engineering project than a culinary one. Ben from the channel Applied Science made it if you are interested (just search applied science pop rocks). Claire is not going to be able to do it. It requires vigorously mixing molten sugar in a 600 psi CO2 chamber. He had to make the apparatus (had to turn custom parts on a lathe) and said it was more difficult than making aerogel.
Bob Vila the pressurized carbon dioxide would be the main hurdle. I wonder if there’s a work-around. There are some people who made it with citric acid but that doesn’t add carbon dioxide so I don’t think those people made “popping candy”.

it's really not. id rather we didnt try to make claire work with ultra high pressure molten sugar. they really arent something people should be trying to make without specialized machinery. its dangerous and expensive.

Yea, but Pop Rocks is more of an engineering project than a culinary one. Ben from the channel Applied Science made it if you are interested (just search applied science pop rocks). Claire is not going to be able to do it. It requires vigorously mixing molten sugar in a 600 psi CO2 chamber. He had to make the apparatus (had to turn custom parts on a lathe) and said it was more difficult than making aerogel.

Bob Vila the pressurized carbon dioxide would be the main hurdle. I wonder if there’s a work-around. There are some people who made it with citric acid but that doesn’t add carbon dioxide so I don’t think those people made “popping candy”.
