I do not include ginger in my nilaga and so when I watched this video, I was surprised to see you putting in ginger on the pan. You made me think if ginger would make a difference in the taste of the nilaga. I will follow your recipe next time I will cook nilaga. I always use pork hock in my nilaga or sinigang. I find pork hocks more flavorful. I also include over-ripe plantain bananas and they make the broth a bit sweeter.
It is...try it also in sinigang it gives a bit of kick..
