Having a physical version of journal’s 1 and 2 would be awesome. We rarely got to see what was in those two journals, so it has a lot of opportunity to add more lore to the show.

However, the Muppet Show was not an arc-driven show. Gravity Falls was. We’ve gotten plenty of Kermit and the Gang since 1981, we have barely gotten more of Gravity Falls.
We ABSOLUTELY need a Gravity Falls Amphibia Owl House crossover sequel series. They should make additional solo content in each franchise to bridge the gap first, though.

I wouldn't mind Gravity Falls coming back as a video game, either a point and click or an open world. An animated anthology series would also work done by different writers and artists and spotlighting other characters outside of Dipper and Mable. Even a series of YA books set between the show would even work to get fans and newer ones into the series.
Alex Hirsch did state in an interview that he wants to do a video game but I don't think that the chances are good since Bob Iger has no interest in this medium. But maybe things will change when he leaves.

I hope we wish to see Daron Nefcy return one day and see her do the same by discussing her future with Star Vs. The Forces of Evil and being open to exploring it again(given how the show ended on abysmal note 5 years ago),probably next year when the show turns 10 years old on January 18th. At least Phineas and Ferb are coming back for a whole new summer and brand new ideas to make the best day ever next year.

As someone who usually expects to hear Vail’s voice at the start of each video, I went through the five stages of grief VERY quickly, in the time it took my brain to register that it was Dipper speaking!
Hirsch could also shift his attention to other characters like Wendy, the Pine brothers, Dippers and Mabel's life at home or some other underutilized character.

Gravity Falls is one of my favourite Disney shows next to Phineas and Ferb. While it'll be cool to see more mysteries and creatures in a Gravity Falls return, what I honestly want to see most if Dipcifica becoming canon.

But what speaks against a movie? There's huge demand and lots of possible stories to tell!
