Great concept! Maybe go full Saturn-style and replace the RCS with one little ullage rocket mounted sideways, then more ullage rockets to restart the engines
it wasn't pointed retrograde correctly and the spinning issues were both caused by the finst thinking you're going in the oppsoite direction trying to turn you fro retrograde the further you were from it, just reverse the fin controls in the right click menu.

You’re losing a lot of efficiency by waiting for the reaction wheels to do the flip maneuver alone. It would be much more efficient to light the engines and use them to complete the flip more quickly.
bruh i thin its owuld be far faer better if you just useed the space x starship super heavy booster and then just put a whole falcon heavy with boosters and all on the first stage and then the seconud stage with a space x dragon x and a secaund dragon xl lunar lander in a big paylaod faring on top of it instead.
also the starship super heavy booster could very easly lug a whole facon 9 heavy first and secund stage with like a 80 ton extra heay playlaod fareing to GEO by itself and then the falcon heavy would then be used for the lunear obitral incertion with its first stage and boosters too then the secound stage could easy be used to slow down and enter lunear orbit and then the dragon x and dragon xl lander then can take care of the rest from there to land on teh moon and then still have more tehn entogh delta v left to ferry everyone back to earth.

To fix the spinning issues with the fins, you can go to whichever probe core is in use and set “control point” to “reverse”
The time from stage sp to boostback is way to high that eats a lot deltav
Yes, I agree - the RCS is underpowered, but I could also turn an engine on earlier.

Have you tried this with raptors and grid fins? It would be more starship like which strives away from the Blue Saturn idea, but id be cool to see
