@MalliganTV typically a serious stunt rider will add an extra lever on the handlebars so they can still operate the rear brake when their feet are not near the pegs. notice at 3:15 he isn't even on the bike, but he is able to make the rear wheel stop.

don"t act like you know somthing you dont. and hey the reason he can let go is because an engine has an idle point and if you let go of the throttle it useally wont die especially if its in motion. common sence

No only 4 stroke. But there is a soundtrack used with some sounds of 2 strokes in it, I think you've heard that.. :)

yes its rear handbrake that engages the two calipers for the back wheel
the other lever above the clutch is a rear brake lever so you can more control of the bike at balance point
