The technique to most looks counter-intuitive, but what the "2nd flick" really does is creates understeer to stop the car oversteering due to the unrealistic setups the esports drivers use

If you consider the throttle input also, it seems to me that this technique is used purely as a counter to the aggressive oversteer setup all the esports drivers use. The "2nd flick" is enforced aggressively, which produces understeer. This in turn allows the driver throw the car into the corner better without losing time while worrying about oversteer on the exit.
Double flick that is the worst explanation I have ever heard, It's a trail braking technique used to change the approach angle before the heavy braking phase which then reduces the input required for the final turn in / apex of the corner which happens once completely of the brake,

not realistic for the current cars but those cars in like 2004- 2008 were like this, alonso was a pro at this driving style

yeah, but in those season it made sense because the tyre grip was lower than now. Now it's slower to drive like this in real life
