    Tried it today but without pearl sugar..instead i rolled my dough on a regular white sugar before putting it in the waffle iron... and boom came out perfectly..i ain't going back to regular waffle from now on..the caramelized sugar crunchiness hit me so hard..

      Yeah but using the pearl sugar isn’t going to ruin it, but I ended up using sugar cubes that I hit with a meat tenderizer a few times, used half the sugar the recipe called for and I did have some caramelization, but I’ve had the store-bought ones and those definitely have a nicer caramelized crunch to them, so I ended up ordering some of the pearl sugar but either way they do come out great and going back to regular waffles is no longer an option 😂

    This is the real deal. Tastes just like authentic waffles in Belgium. I've been searching for this recipe for years and finally found it. Thanks for sharing. I can never go back to "fake" North American waffles again. LOL. Folks, if you are trying this recipe for the first time, do not skip the pearl sugar. It won't be the same without it.

      North American waffles are not trying to be Belgium waffles. They are a breakfast food and are lighter with less sugar. Meant to be served with syrup like pancakes. You're comparing apples to oranges.

    I prefer to make the pearl sugar. I mean sugar is cheap as heck (like one cent an ounce) so I didn’t feel like buying pearl sugar that’s 3 times more expensive. You can mix powdered sugar with a bit of water and put it through a grater, then leave it to dry. Works great!

    You can make pearl sugar either seizing a sugar & water mixture, like when you ruin caramel, but take it out before it re-liquifies if that makes sense. Also can mix powdered sugar & a little water into a sort of dough, then clump into tiny pieces, let dry for 24hrs & you're good. For those of us who can't find it at the local store & too impatient for Amazon. 😁

      Even easier is taking sugar cubes and just crushing it. Exactly what I did and worked great

    This is my very first time making Belgian waffle ever. I bet on this recipe and it was a success on first try. This recipe yields fluffy, light on the inside, crispy on the outside. Highly recommend!👍 Thank you for the recipe!🙏

    Made it and I was sooooo sceptical because it was my first time and IT WAS AMAZING! The only change I’ll make next time is to get one of those deeper waffle irons and increase the brown sugar. Definitely a keeper!

    This is the best recipe I have tried. I was not able to incorporate all the butter, or rather it seemed the butter was all in the batter and then some leaked out. But there's no such thing as too much butter! 😂
    The other recipes I have used made a much heavier product. Sometimes there are frozen Liege waffles in the stores with this consistency, kind of something between a cookie and a biscuit, using American terms.

    In my house I can’t make them fast enough, they are so freaking good. This recipe is the best. It’s hard to go wrong with butter and sugar. The house smells like baked cheese when they are in the waffle iron but the results are big smiles on faces. We live them.

    We made this today and wow soooo good! I’ve tried other recipes like Joshua Weissman’s on youtube but yours were way better. We topped it with chocolate cream, Marscapone cream and berries. This will be my go to from now. Thank you so much!

    I made this recipe. They are delicious. I had them with syrup, strawberries and whipped cream. I had most of the ingredients. I just had to get the pearl sugar, strawberries and whipped cream.

    I grew up on these as a kid in Waterloo, Belgium. The pronunciation in the video is just killing me, though. It’s pronounced with two syllables “lee-EHZH”!

    Thank you for this scrumptious recipe; however be careful with a metal fork and a non stick surface (you can inadvertently scrap some of the coating into your food)……AWESOME and well explained recipe….thanks again.

    I guess I'm a bit of a snob. But the city of Liege is pronounced: Lee-ehje. I like to mix my yeast with warm water; then add to the flour, the rest of the dry ingredients, and finally the wet ingredients last. Salt could inhibit yeast activity. That's just me. Anyway, bon appetit!

      Voodoo Dolls - yes you can but keep in mind this is a yeast dough and it will overproof if too much time elapses. So you will want to store it in a very cold refrigerator to slow fermentation down to a crawl, and if you are going to wait longer than one day, then freeze the dough. If you freeze, I recommend pre-portioning them into individual waffle balls first.

    There's no need to grease your waffle iron if it's non-stick as the butter in the batter will prevent your waffles from sticking.

    I have a waffle maker like this, but when I baked Belgian waffles with pearl sugar, the waffles stuck to the machine. Please, I would like to know how to clean it. The device’s panels are not removable, and the waffle has become sticky, and I have only used it 6 or 7 times.

    I followed this recipe as best as I could but after combining all of the ingredients I found that it was simply too runny, it was more of a batter than a dough. I’ve been baking for a while so I believe you used more flour than the description states. Not saying that you’re misleading or lying to your audience but I always use a scale when measuring dry ingredients for more accurate results and therefore 2 cups of flour should be 240g. I scrolled down the comment section and saw you mention in a reply to someone having a similar problem that you measure the flour by simply scooping and pouring. That’s completely fine but I feel like you should adjust the measurement in grams in the description so that others don’t have this problem. It’s still a great and helpful video to watch so you have my thumbs up no matter what!

      The metric measurements are always available on my website and there’s always a link in the video description. Less than 10% of my audience uses metric so I do cater to that.

      Yeah I figured you measured in cups rather than grams because most people don’t have a scale. Either way the waffles tasted amazing and I’ll probably just tweak the recipe a little bit next time I make them. I did look at the recipe in your website prior to making them but I wasn’t able to find the ingredients in grams? Thank you for taking the time to reply though!

    This is a great recipe. The only problem with it is that you don’t let people know how long they should mix the dough for in the stand mixer. Knowing that and it was speed level on your KitchenAid would be most helpful

    What temp do you heat the waffle iron to? I've done regular waffles and added Maple Sugar pebbles, but some of the sugar stays on the iron and burns.

      You should follow the temperature setting recommendations from the manufacturer of your principal waffle maker. Many of them don’t have temperature adjustments and there’s only one automatic heat setting.

    I would have liked to see you break one open so we could see the structure inside. Usually these kinds of waffles require a longer (overnight fridge) rise to build up gluten since it's more like a dough rather than a batter.
