The Ratchet and Clank games had cool title screens to, I think. Particularly Ratchet and Clank 2 which featured them relaxed and watching TV in Ratchet's home, kinda like Just Cause 3 (except it did it first ;P)
The neat thing is, if you start a new game, you'll start a Cutscene where they're interrupted and whisked into another Galaxy to start their adventure.

It could be argued that there wasn't as much coding work put into the title screen of Fable 2, but I'm pretty sure it took hours of artistic endeavor to create, and it shows. It's absolutely gorgeous, slowly panning through a temperate forest scene as it changes through four seasons as a haunting melody plays. I used to just leave it sitting there whilst I ate a meal, it was so beautiful.

The Just Cause one reminded me of the menu screen in Prototype 2. The main menu screen after you started the game has all the options on one side, and on the other side it shows footage of the area you were last in before saving. It showed all kinds of awesome footage, like the view of the destroyed Manhattan island and the military holding civilians in cages and stuff like that, but once you press "continue", instead of fading to black, the menu screen just goes away and it turns out the main character was just out off frame of the scene that was shown in the main menu and the camera shifts back behind him. That kinda blew me away back then, even if it's not as special and impressive now.
