Tai Ping Koon Restaurant has a history of more than 160 years, and is the first Western restaurant in China to be opened by a person of Chinese descent. Many of its signature dishes, including chicken wings in Swiss Sauce, the soufflé, roasted pigeon, and smoked pomfret, are the talk of the town. But how does the restaurant ensure that its century-old flavours can be passed on to future generations? We immigrated to the US over 50 years ago when I was only a few years old but we visit Hong Kong often. We tried this restaurant during one of our visits a few years ago because we heard it from one of our friends. We asked the waiter to recommend some dishes to us and we loved everything! We especially loved the chicken wing in Swiss sauce, the fried pigeon and the souffle! I think I could have eaten the whole souffle myself, it's that good!! We also recommended this place to our friends after we returned from Hong Kong and we will definitely eat here again!
