    Jacques Pepin separates his eggs by cracking them all into a bowl, then with clean hands, dips out each yolk with his fingers. It saves time and you leave much more white in the bowl, just don't don't break the yolks!

      That's the way I do it as well. I crack my eggs into the measuring cup that I'm going to put the milk in first to make sure I don't break the yolk. Then I pour the egg into the bowl that I'm going to make the meringue. Once all at the eggs are in the bowl, I scoop out the yolks with my fingers. Easiest method I've found, and fewer bowls to clean up. 😁

    Semantics are different in different parts of the country. Where I grew up, a "cream pie" had whipped cream on the top. A "meringue" pie had meringue on the top; this was true no matter what the filling was. And the terms were not interchangeable. So in this video you actually made a pineapple meringue pie, not a pineapple cream pie. I was always mightily disappointed when I was traveling away from home and ordered a piece of cream pie, only to be served a piece of pie with meringue on top. Not the end of the world, certainly. But I did learn that some items are called different things in different areas of the country.

      @@CollardValleyCooks See, I think you missed my point. If we go by your explanation, then what you actually made was a "pineapple/sugar/cornstarch/vanilla/egg/evaporated milk/water" pie. See what I mean about semantics? Love ya no matter what!

      Cindy D you're right it is a bit confusing! There's a terrific family owned restaurant near me that makes wonderful pies. When you order chocolate cream, it's topped with whipped cream. When you order chocolate meringue you get the same crust, same filling but topped with meringue! I agree, Tammy sure entertains while cooking delicious food.

    Used my 30 year old KitchenAid today to make drop cookies with chocolate chips and pecans for my brother-in-law’s birthday treat! Worked perfectly! Love my KitchenAid!! Yummy looking pie - tfs.

    The written recipe doesn't have any pineapple in it! Could you add the pineapple juice to your pudding in place of some of the water? I think it would taste good.

    Just wanted to let you know this was my favorite pie my Grandmother Stringer did for me when I was a kid! She passed away in 1973 and I never found her recipe!
    Thanks to you I tried this pie and it taste just like hers!
    It brings back wonderful memories of my grandmother!
    It will be a regular at family dinners from now on!
    From a old retired lawman that loves to spoil his family!

    I love your pineapple pie recipie. My grandmother taught me how to make it in a cast iron skillet. I like your way better. Same with chocolate - I like your way better. It still tastes the same, but less time and mess. My mother didn't like to cook, so she made sure I got.some lessons from my grandmother. I could put a Christmas or Thanksgiving dinner on the table at 12 years old. My children also hate to cook and would rather have carryout. Love your show! I know that your husband loves you very much as he is always glad to help you in the kitchen. Have a wonderful Christmas and Happy New Year! Keep cooking! Elaine

    Your GRANDMOTHER didn't make her own pie crusts. Oh I forgot you are younger than me. I only saw my mom use refrigerated roll out crust one time . My dad was in a nursing home and she was rushing to bake him a cherry pie to take back to the home with her when she went up for the evening visit. She was rushing around doing his personal laundry, making sandwiches and pie and coffee to take in thermos and a big jug of iced tea for dad's friends that were going up to the home to play cards with him. That was the first and last time she used a pre-made crust. It was good but not near as good or pretty as her homemade.

    This is one you don't see very often. My mom used to make this back in the 60's except she added a bit of fresh Angel Flake coconut as well. Still one of my all time favorite pies.

    I bake pies at home and am not very acquainted with making many #creampies, nor have I ever eaten an "Old-fashioned pinneapple-cream pie" 🍍 before. This #recipe I HAVE to try! 👏 I am familiar, however with making meringue, when I bake my dad's favorite pie: #lemonmeringue 🍋 lol. I never heard of the cornstarch trick for the meringue, but am looking forward to trying it! The only pineapple pie I've tried, which was really delicious btw, was a store-bought pineapple pie (from Ralphs, in the clearance section lol). Thanks for sharing this. Much love.😍🥰🤤👍👏

    That was my favorite pie that my Mamaw Stringer would cook for me when I was a kid!
    She has been gone almost 50 years and I did not get the recipe before she passed!

    Probably my favorite type of meringue pie! Most favor chocolate or coconut, but this ine is the bomb! My mother made several yrs ago and I fell in love and made since. I was just guessing at ingredient, so glad to have a recipe! Thank you!

    My favorite pie - right up there with pecan!
    We grew up in Southern Oklahoma but left after finishing college. Most of our first year out of college was spent in the Chicago area, and after finding out I was pregnant I craved Pineapple Cream Pie! Nobody in the northwestern suburbs had ever heard of Pineapple Cream Pie! My husband looked everywhere! A month or so later we moved to Kansas City and I finally got my Pineapple Cream Pie! Ha!
    I really appreciate your sharing this! Definitely a MUST TRY! 😍

    I make pineapple pudding. Instead of banana pudding, use pineapple instead of bananas. It is so good. You made a beautiful pie!

    I made a passion fruit chiffon pie today. The meta hue came out with soft peaks. I knew I should have kept going, but I didn’t. I then had to fold it into my pie filling. I’m sure it didn’t set up the exact way it was supposed to, but it was tasty anyway.

    I don't know if you've ever made a Pavlova but the recipe I use calls for the use of cornstarch for the reason you're using it in your meringue. I've come across a few recipes that don't use it but I'll stick to the recipe I use because it really does help with the extra moisture. For a 4 egg white Pavlova you use 2 tsps of cornstarch but depending on the humidity in the house I like to add up to 2 more...

    That looks wonderful! We love pineapple so I will be making one of these sometime. Have you ever made an Elderberry pie? I didn't know if that was just a northern thing. Since we don't like the seeds would you have any ideas on how to make a seedless Elderberry cream pie with a meringue?

    I’ve always used corn starch in my meringue!!! Never had a problem with it. If you haven’t tried it, you should, you’ll love the result.

    To avoid messing up your cooked meringue...cut with a knife dipped in HOT WATER for each cut...

    I made your chocolate pie this weekend for a family reunion and it was gone in a matter of minutes. I did get a taste and it was fantastic. I have a question when you make your pineapple cream pie you use 6 tablespoons of cornstarch. When you make your chocolate pie I used 3 tablespoons. Is the difference because you are adding the pineapple? The same amount of fluid was used in both recipes.

    Could you just use powdered sugar because it has cornstarch in it? Shirley Corriher always said to put some twinkie cake crumbs over filling and that would help absorb any excess liquid and help with weeping. Love you Tammy♥️

    My mother taught me to use powdered sugar instead of regular sugar when making meringue and you will have the prettiest loftiest meringues for pies that you can ever get!

    How about using powdered sugar instead of granulated in the meringue? It’s much lighter. I’ve never heard of pineapple pie let alone pineapple cream pie. I think my husband would like this. ☺️

    Beautiful pie and looks delicious! I have never made a pineapple pie, only pineapple casserole. I do have a question…..how do you keep your pre-baked pie crust from shrinking? I have tried everything, even dry beans while it’s baking, but it will still shrink.

      If it is pricked and pulled up and sealed on the lip it should be good.

    Question: Instead of the being added to the milk can you the strained pineapple juice? Woud that curdle the milk?

    I absolutely love your easy microwave pie filling recipes, Tammy!!! Well, I have only tried the coconut cream pie, but it always comes out perfect, and I expect the same from the rest! The recipe is the 💣 BOMB❤️
