There is a Bimbo bread factory a couple miles from me. It runs 24/7. When the wind blows just right, we are bathed in that wonderful smell. My brother worked there and retired after 29 years. He was a master-baker.
I worked at a Flower's and they are all pretty much automated except for running the mixers. We didn't have any master-bakers, just one guy that monitored the oven.

I was born during the "Great Depression" and I remember going to the local large bakery, named "Gorman's" Bakery and they would make loaf, after loaf, of sliced bread to take to the grocery store, for sale, and they would sell day old bread for 10 cents. Fantastic, and so appreciated.
The 10 cent loaf. Reminds me of a scene in the movie, "Grape of Wrath" where the Joad family was in a store/diner and Pa was trying to buy a 10-cent loaf. The waitress said they only had 15-cent loaves but the owner told her to give it him for 10 cents because it was yesterday's bread.
Yes, my third grade class visited a Webers bread plant in the 60s and we each got a Minnie loaf of bread to take home, that’s all I remember from the visit. Lol.
Wow, my third grade class visited a commercial bakery in the 60's in Cleveland as well. Also my cub scout group when to a GM automotive assembly plant. Keep in mind that the kids on South Park are also third graders. Times have changed.

Around 15 years ago I was an apprentice mechanical draftsman for a company that manufactured bakeries like this. It really was fascinating to design and see the manufacture of these machines. Really a wonderful experience I had there.

There is a bread factory in the town that I live in. They also make large and small powdered doughnuts and pecan rolls. Let me tell you. The smell in the air makes it just glory to be down town when they are baking.
Over time when exposed to those smells you will feel uncomfortable!

The people that work at the plant and the people that work in stores downtown where the smell is every day, aren’t uncomfortable with it. I’ve even asked some of them if they’ve ever gotten to where they don’t like the smell. It’s just not as noticeable to those that live and work around it everyday as it is to those of us that live outside of town and only smell it from time to time.
Think of it as a paper factory. To those that only smell it from time to time, it stinks to all high heaven but it’s not even noticeable to the ones,that work in the factory unless they are somehow reminded of the smell.

I make it at least 5 times a week, a large amount for most of my calories on those days. Very healthy version with whole wheat flour.
I grew up near a Frito Lay factory in Bethesda, MD (pre-Swamp Days - 1950's), and the windows were left open. The smell of fresh made Fritos was wonderful.
My favorite bread 🍞 is Nature Own wheat bread and the sourdough bread 🥖

That is very informative. I grow the wheat that in the past was a significant part of making a slice of bread. If I grow wheat it will bring me $6.00/ bu that will make 2,000 slices. If wheat were free the price to the consumer would not change by much! It takes 2 years of my planning...a $300,000 combine...a $100,000 grain drill...a $200,000 tractor...a $300,000 sprayer... a $100,000 used truck...and much more if my equipment were new. Why is the consumer paying so much more than 50 years ago when wheat has only doubled in price but bread is more than 10 times higher?!
And who designs and builds these remarkable machines?

I sure the Egyptians used preservatives. I have a bread machine at home I make wheat breads, nut breads and other types of breads all without chemicals and preservatives.I also bake my own bread loaves in the oven. You cannot beat home made bread.

I work at a bakery here in Florida. We don't use preservatives. We have a system called sponge dough mixing. We mix the main ingredients and let it rest. We then place it into a 2nd mixer with the rest of the ingredients that make it the final flavor or style (Honey Wheat, Whole Wheat or Butter) and then start the process of cutting forming and proofing. Ours has a shelf life of almost 10 days.

The sugar is a shelf life extender.
The vinegar is a preservative.
But, you’re right, just the four basic ingredients are all you need to bake bread at home.

Most commercially made breads are the lowest quality bread you can get. If you want to taste real bread either bake it yourself or get the more expensive artisan type breads. Mass produced bread is a joke and should never be referred to as bread as it is an insult to real bread.

@@skipmagil Facts are facts. If you bake bread yourself why does it stay fresh much longer than mass produced bread. And if you store it properly in a specific container each slice you cut reveals fresh bread underneath but commercial bread goes stale with each slice as stale as the next. That alone should tell you commercially made bread is not as good as homemade. And I know what ingredients I placed in my bread. Do you know what went into the bread you eat? You have to accept what the labelling says and we know it is not always 100% accurate.
