Where i am from we call this gallo pinto. We soak pinto beans overnight, make them next day for a couple of hours, use some to fry beans and mix fresh rice. The rest of beans is frozen. We add garlic, onions and peppers and salt.. This looks really good!

Aww thanks so much! We eat this to replace white rice. So sure, fish would be more classic type of dish, but can be any Japanese main dish/side dishes.
Azuki beans have a hard shell and takes a longer time to get tender. If the beans can be cooked in 10 mins or so, then you can cook at the same time... but azuki beans can't...
-masu is thank you in general. -mashita is the past tense. So if you're thanking for something in the past, you use -mashita. If you're thanking in general, -masu.
seems a easy enough recipe which is well explained...one thing might query is that we can probably get the glutinous rice nowadays..but not sure on the azuki beans? could we use red kidney beans instead or is there a better substitute? what would it be served with or is it a dish on its own?

This rice recipe is yummy. My mom would make it for my siblings & I growing up & later when we’d come over with our own kids. BTW, definitely much different than kidney beans if you’re thinking of sub’ing them.

Do you have an instant pot method?
I don't but beans should be cooked separately to get the red color liquid. Then cook IP for 8-10 minutes? I haven't tested, but just my estimate....

Usually it's glutinous rice only OR glutinous rice & regular rice combination. :) I think you can do that but make sure to cook beans first though.
